Braised Beef ???? with Carrots ???? & Brussels Sprouts

Ingredients
2 pounds beef flank
2 carrots
1 pound brussels sprouts
ginger, sliced
green onion
Seasoning and spice
dried mandarin peel
2 tablespoons white vinegar
1/2 cup rock sugar
2 tablespoons dark soy sauce
2 cups Shaoxing cooking wine, divide
2 tsaoko
1 cinnamon stick
star anis
2 dried red hot peppers
angelica spice
white cardamom
1 tablespoon soy bean sauce
1 teaspoon white pepper
oil, sugar, salt
1, Remove meaty smell
Put beef cube into cold water in wok over medium high heat. Add some green onion, ginger slices, dried mandarin peel, and white vinegar. Once water is boiling, take away the scum for 15 minutes. Take the meat out and throw the water in wok.
2, Coloring the beef
Wok over medium heat, add oil, 1/2 cup rock sugar and little bit water. Sauté until the sugar turns to dark brown. Add green onion, ginger slices, then put the beef back sauté together. Add 2 tablespoons dark soy sauce, 1 cup Shaoxing cooking wine. Once mix well, pour all these into a high pressure cooker.
3, Making sauce
Wok over medium heat, add oil, add 2 tsaoko, 1 cinnamon stick, star anis, 2 dried red hot peppers, angelica spice, and white cardamom. Sauté until fragrant, add 1 tablespoon soy bean sauce and 1 cup Shaoxing cooking wine. Then add water amount can cover beef. After the sauce is boiling, pour into high pressure cooker cover beef. Cook for 20 minutes.
4, Preparing vegetables
While cooking the beef, cut the carrots into cube same size as brussels sprouts. Wok over medium high heat, add oil, add carrots and brussels sprout in, 1/2 teaspoon salt. Sauté, until the color turns bright.
5, Combining
After beef is cooked, open the high pressure cooker, pour vegetables in. Turn heat to medium, boil for 10 minutes. Let vegetables absorbed the beef tastes and well cooked.

The one we use has a really nice consistency - it's not too thick but not too watery. It's also not too salty and has a slight tinge of sweetness. The main purpose of dark soy sauce is to give your dish a dark colour with a really nice caramel taste)
