Cuban-Style Black Beans and Rice Recipe

Cuban black beans & rice /Congri / Moros y Cristianos / (How to get darker rice)
Arroz Moro
Ingredients:
2 cups of rice
1 /2 bag black
3 tsp vegetable oil
1-2 bay leaves
olive oil
1 /2 medium bell pepper diced
1 /2 med red pepper (diced )
1 large onions
6 garlic cloves
1 tsp oregano, dried
1/2 tsp cumin
1 tbsp Sazon completa (Badia) or Sazonador (Goya)
1 tsp salt
1 tsp ground black pepper or to taste
bacon or ham or neck bones or Spanish chorizo sausage diced
1 tsp brown sugar
1 tsp vinegar (optional)
1. Add beans to a pressure cooker 1 bay leaf, 1 -2 hammocks or 2 pieces of neck bones. Cook for 1 & 1/2 hours or 40 min in pressure cooker
2. When tender drain beans put beans in a bowl & save the broth. Set aside.
CONGRI INGREDIENTS:
1. In the another pot cook your Sofrito: add 2 tbsp of oil to sauté 1 med onion diced , 1 red pepper & 1 green pepper & 4 cloves of garlic. Add 1 tsp oregano, 1/2 tsp cumin, 1 bayleaf, 1 tbsp Sazon completa, salt & pepper to taste. Add bacon or ham or chorizo sausage diced for flavor. Add rice, stir fry for 3 minutes to coat rice.
2. Add beans & 2-3 cups beans stock, 1 tsp vinegar, 1 tsp sugar
3. bring to boil and cook on slow heat for about 25 minutes or until liquid is almost absorbed by the rice. Lower the flame, cover the pot with foil or a lid to seal in the steam. If rice is still hard add 1/4 c of bean broth

Cooking Cuban - Congri (Black beans and Rice)
Congri is the perfect way to transform your leftover fríjoles negros (black beans) into another delicious Cuban dish! Abuela and I show you step-by-step how to make it. Sometimes referred to as “moros” this rice pairs great with bistec empanizado (cuban breaded fried steak). This authentic recipe has been passed down for generations in my family. Now, it’s your turn to learn!

Instructions:
Step 1:
Make Cuban black beans. Whatever amount of beans are left over from that meal, can be used for your congri!
Step 2:
Measure out the amount of black beans you have -- including the liquid/broth. Put those in a pot.
Step 3:
Measure out exactly the amount of rice as you have beans. For example, if you have 1 cup of beans, use 1 cup of rice. If you have 2 cups of beans, use 2 cups of rice -- and so on.
Step 4:
Rinse the rice with water and drain a few times until the water that is being drained is more clear.
Step 5:
Add the rice to the beans in the pot and stir well. Taste to see if it needs salt. Add if yes. Add a bit of olive oil to the pot as well and stir.
Step 6:
Turn the stove to medium-low heat and cover the pot. Let simmer.
Step 7:
Keep an eye on the congri. Stir every once in a while to make sure it’s not sticking to the bottom and it’s cooking evenly. Always cover it back up to keep in the moisture.
Step 8:
Once you see all the liquid has been absorbed and the rice is soft, remove the congri from the heat.
Step 9:
Add a little more olive oil, stir and serve!

Paso 2:
Mide la cantidad de fríjoles que tienes -- incluyendo el caldo/líquido. Échalos en una olla.
Paso 3:
Dependiendo de la cantidad de fríjoles que tienes, usa esa cantidad exacta de arroz. Por ejemplo, si tienes una taza de fríjoles, usa 1 taza de arroz. Si tienes 2 tazas de fríjoles, usa 2 tazas de arroz y sucesivamente.
Paso 4:
Lava el arroz unas cuantas veces hasta que el agua que estás drenando, esté clara.
Paso 5:
Agregue el arroz a los fríjoles y revuelvelo bien. Determina si le hace falta sal y agregale en el caso que si. Agregale un poco de aceite de oliva. Revuelvelo.
Paso 6:
Aprende la candela a una temperatura media-baja. Cubre la olla con una tapa. Déjalo cocinar a fuego lento.
Paso 7:
Vigila en congri. De vez en cuando revuelvelo para asegurar que no se pegue y que se está cocinando parejo. Siempre manténgalo tapado si no los estás revolviendo.
Paso 8:
Ya cuando todo el líquido se ha absorbido y el arroz está suave, apague la candela.
Paso 9:
Agregale un poco más aceite de oliva, revuevelo y disfruta el congri!
