How To make Zucchini Squash Burgers
5 Zucchini (or any other
-variety of summer squash) 2 tb Oil
4 Garlic cloves
4 lg Onions, diced
2 Carrots, diced
1 Green pepper, diced
5 tb Tahini or peanut butter
3 tb Tamari
1/2 ts Paprika
1/2 ts Oregano
1/2 ts Basil
1/2 ts Sea salt
1/8 ts Red pepper (optional)
1/2 c Sesame seeds
1/2 c Sunflower seed meal
1 c Corn meal, or flour, or soy
-powder
Slice the zucchini and place in a large pot with 1/2 cup water, adding enough squash to fill the pot. Steam over medium heat for 7 minutes, until soft. Heat the oil in a large skillet over medium heat; add the garlic, onions, carrots, celery, and pepper; saute for 7 minutes, till vegetables are tender. Drain the zucchini and mash well. Add the sauteed vegetables, tahini, seasonings, sesame seeds, sunflower seed meal, and corn meal. The batter should be thick not wet--add flour if needed. Preheat oven to 375. Oil a cookie sheet. Using a tablespoon, make patties and place them on the sheet. Bake for 8 minutes on each side, until golden brown.

How To Make Vegetarian Squash Burgers - Max Cooking
Hi, welcome to Max cooking and today we are making these delicious vegetarian burgers!
First, we have to grate some squash, about two small ones or one big will do.
Then put it in a large bowl, and add some flour.
Stir in more flour until you got a thick creamy dough.
Cut a tomato, a pepper, and some onion into pieces, and put it into the mixture.
Keep a little of the onion for later.
Then add two eggs, work it in.
If your dough will not stick together, add more flour, and a spoon of water.
Season with salt, black pepper, and basil.
Put a frying pan on medium to low heat, and add olive oil and the onion slices you have left.
Chop up some garlic and put into the pan.
I like frying with garlic and olive oil, because it gives an exceptional smell and delicious taste.
Make burgers out of your dough, and make them as big or small as you like.
In my frying pan, it goes two big burgers in, or three small.
They will of course take longer time to fry if they are thicker.
Fry them on one side until they are golden brown, and then flip them over.
Keep doing this until you have them cooked through, you check them by cutting a tiny piece off the side and taste.
When you think they are finished, put them on a plate and top it off with some Greek yoghurt and oregano or basil.
Look at that, beautiful…
You can put them between some bred with cheese, cucumber, tomato or what you like on your burger.
So there we have it, our yummy squash burgers!

Summer Sides: Flavorful Squash & Zucchini
This is one of my go to summer side dishes when I need something quick, easy and flavorful!
I just love this colorful trio of yellow summer squash, green zucchini and red Roma tomatoes.
The parmesan cheese and Italians seasoning really add a nice flavorful kick!
