How To make Zucchini Lemon Muffins Ww
2 1/4 c Flour, all-purpose
1/2 c Sugar, granulated
2 ts Baking powder, double acting
1 t Baking soda
1 1/2 c Zucchini
- shredded 3/4 c Egg substitute
1/4 c Vegetable oil
2 tb Lemon juice
1 t Lemon peel
- grated
Preheat oven to 350F. Line 12 2-1/2" muffing pans with paper baking cups; set aside. In large mixing bowl combine flour, sugar, baking powder, and baking soda; set aside. In medium mixing bowl combine remaining ingredients, stirring to combine; add to flour mixture and stir until moistened. Fill each baking cup with an equal amount of batter. Bake in center oven rack for 20 minutes or until golden and toothpick comes out dry. Remove from oven to wire rack and let cool. Weight Watcher Exchanges: 1 Fat, 1/4 Protein, 1/4 Vegetable, 1 Bread, 40 Optional Calories. Per serving: 167 calories, 4 g. protein, 5 g. fat, 27 g. carbohydrates, 47 mg. calcium, 161 mg. sodium, 0 mg. cholesterol, 1 g. dietary fiber. 1 egg
1/4 cup nonfat plain greek yogurt
1/2 cup unsweetened applesauce
1 tsp vanilla
1/2 brown sugar replacement
1 1/2 cup all-purpose flour
1/2 tsp baking soda
1/4 tsp baking powder
1 tsp cinnamon
1/2 tsp salt
1 cup shredded zucchini
Bake at 350 for 18-20 mins
cookies: 3 points for 1
1 banana
1 egg
1/4 cup unsweetened applesauce
1 tsp vanilla
1/4 cup brown sugar replacement
1 cup all-purpose flour
1/2 cup rolled oats
1 tsp cinnamon
1/2 tsp baking soda
1/2 cup shredded zucchini
1/4 cup chocolate chips
Bake at 350 for 15-18 mins
fritters: 2 points for 1
2-3 medium zucchini
1 egg
⅓ cup Parmesan cheese, shredded
¼ cup shredded light mozzarella cheese
2 tbsp chives, minced
1-2 tsp minced garlic
¼ cup all-purpose flour
¼ cup panko breadcrumbs
Air fry at 375 for 18-20 mins
meatloaf: 5 points per slice
1.2 lbs 93% lean ground turkey
1 egg
1 cup shredded zucchini
1/2 yellow onion, diced
1/2 cup panko
onion salt
1 tsp minced garlic
2 tbsp ketchup
1 tbsp worcestershire sauce
sauce: 3 tbsp ketchup
1 tbsp worcestershire sauce
1 tbsp brown sugar
Bake at 350 for 50-55 mins

Vollkorn Zitronen-Zucchini Muffins | fettfrei, saftig und lecker
Zitronen-Zucchini Muffins
200 g Vollkorn-Dinkelmehl
1 EL Backpulver
1 Prise Salz
1 kleine reife Banane
180 ml Sojamilch
125 ml Alpro Skyr oder Sojajoghurt (Zitronenjoghurt wäre auch toll)
3 Zitronenwürfel
oder die Schale von 2 kleinen Zitronen (alternativ Zitronenaroma, Zitronenextrakt etc.)
3 EL Erythrit
140 g geraspelteZucchini
♥ Bei KoRo bekommst du günstige (meist Bio) Produkte in Großpackungen und dort sparst du immer zusätzlich 5% auf alles mit dem Code: VEGGILEO
Zubereitung:
In einer Schüssel Mehl, Backpulver und Salz vermischen. In einem Mixer die Banane mit 60 ml Sojamilch glatt pürieren. Die Bananenmischung zu der Mehlmischung geben, dann die übrige Sojamilch, Skyr/Joghurt, Zitronenwürfel (oder -schale) hinzugeben und unterrühren. Zucker hinzugeben und erneut rühren, sodass ein homogener Teig entsteht. Geriebene Zucchini unterheben und portionsweise in die Muffinförmchen füllen und ca. 25 Minuten backen (Stäbchenprobe).
Etwas abkühlen lassen und mit Zitronenguss verzieren (Erythrit zu Puder mahlen und mit etwas Zitronensaft glatt rühren).
