How To make Wild Rice Casserole
1 c Wild rice, uncooked
1 lb Fresh mushrooms, sliced
-thickly 1 c Minced onion
3 c Vegetable broth
3 Cloves garlic, minced
Rinse wild rice well. Combine wild rice, mushrooms, onion, and garlic in a 3 quart casserole dish. Pour broth over it all, cover, and bake at 350
degrees for about 1 1/2 hours. I use the "jumbo domestic Canadian" wild rice for the best results, but any wild rice will taste good. I usually stir after an hour of baking. The liquid is absorbed all at once toward the end, don't panic! I add a teaspoon of salt when entertaining SAD eaters, and often increase the amount of onion and garlic when my husband and I are eating alone. WILD RICE RECIPE:
Ingredients:
1 Tbsp olive oil
1 Medium onion, chopped
1 Large carrot, chopped
2 Celery stalks, sliced
2 Cloves garlic, minced
4 Cups Chicken stock
2 Cups Wild Rice
2 Tbsp chopped parsley
2 Tbsp Chicken base
Preparation:
1. Heat oil in a large nonstick skillet over medium heat
2. Add onion and garlic, stirring them together.
3. Add carrots and celery together and cook until tender
4. Add in chicken stock, rice mixture, chopped parsley and chicken base
5. Heat until it boils then transfer into a baking dish
6. Cover the top of the baking dish with foil and cook in the oven at 350°F for 30-35 minutes.

Weeknight dinner is a breeze if you have a skillet, pre-packaged rice and some hamburger. With tons of flavor and ease of use, our skillet wild rice casserole is a home run all around.
Ingredients:
• 6 oz box long grain and wild rice
• 1½ lbs lean ground beef
• 8 oz sliced button or cremini mushrooms
• ½ yellow onion, diced
• 1 clove garlic, minced
• 1 Tbsp all-purpose flour
• 1 cup beef broth
• ¼ tsp ground thyme
• ½ tsp paprika
• ½ tsp dried oregano
• 1 cup milk
• 1 cup grated Parmesan cheese
• 1 cup Italian blend shredded cheese

3 cups cooked chicken
1 box Ben's Wild Rice prepared
1 can green beans
1 can cream of mushroom soup
1 4oz jar chopped pimento
1 medium onion chopped
1 cup mayo
1 cup shredded cheese
Preheat oven to 350°. mix all together and pour in prepared Casserole dish and bake for 30 minutes.

Wild Rice Casserole
Wild Rice Hotdish
1 cup of wild rice (cook with boiling water til done)
Brown 1 pound of hamburger (or less)
2 cups of celery (cook until slightly crunchy)
1 large onion (brown with hamburger)
Add 1 can mushroom soup
3/4 can of water
1 can mushrooms
2 tablespoons of soy sauce
Bake at 350 for 45 to 60 minutes

Betty's Cheesy Wild Rice Casserole
Betty demonstrates how to make Cheesy Wild Rice Casserole. This is a flavorful, hearty casserole that is very easy to make.
Cheesy Wild Rice Casserole
1 box Uncle Ben’s long-grain and wild rice, prepared according to package directions
2 tablespoons butter
2 tablespoons finely-chopped celery
2 tablespoons finely-chopped onion
2 tablespoons finely-chopped green bell pepper
½ pound shredded American cheese (You may use Velveeta.)
7-ounce can sliced mushrooms, drained
½ cup half-and-half cream
cooking oil spray
Heat butter in saute pan until melted. Add celery, onion, and green pepper and saute until soft. Stir sautéed vegetables into prepared rice. Add American cheese and sliced mushrooms. Mix well and pour into a baking dish that has been sprayed with cooking oil spray. Pour half-and-half cream over top and bake at 350 degrees (F) for 30 minutes or until browned and bubbly. Serve immediately. This casserole is a favorite with my family. I hope you enjoy it! --Betty :)
