Professional Baker Teaches You How To Make CHOCOLATE CREAM PIE!
Chocolate Cream Pie is on the menu in Chef Anna Olson's amazing kitchen, and she is going to teach you how to make this delicious recipe from scratch! Follow along with the recipe below!

Recipe
Makes one 9-inch (23 cm) pie
Serves 8 to 10
Ingredients
Crust
1 ½ cups (270 g) chocolate cookie crumbs
¼ cup (60 g) unsalted butter, melted
Chocolate Cream
5 oz (150 g) semisweet chocolate, chopped
2 Tbsp (30 g) unsalted butter, cut into pieces
1 tsp (5 mL) vanilla extract
½ cup (100 g) granulated sugar
3 Tbsp (22 g) cornstarch
½ tsp (2.5 g) salt
1 1/4 cups (310 mL) 2% milk
1 ¼ cups (310 mL) 18% cream
6 large egg yolks
Topping
1 cup (250 mL) whipping cream
2 Tbsp (16 g) icing sugar, sifted
¼ tsp (1 mL) vanilla extract
Directions
1. For the crust, preheat the oven to 350 F (180 C). Stir the cookie crumbs and melted butter together until evenly combined and press this into a lightly greased 9-inch pie plate. Bake the crust for 10 minutes, then cool while preparing the filling.
2. For the filling, place the chocolate, butter and vanilla in a bowl with a strainer placed over it. Whisk the sugar, cornstarch and salt in a medium saucepot. Whisk in the milk and cream and then the egg yolks and then bring this up to a simmer on medium heat while whisking constantly, until the mixture just begins to bubble and is glossy and thick (once it starts to thicken, it happens quickly.) Pour this through the strainer over the chocolate and butter and whisk until the chocolate and butter have melted. Place a piece of plastic wrap directly on the surface of the filling, cool to room temperature and then chill for at least 4 hours to set.
3. Once chilled, stir the filling gently and spoon this into the pie shell, spread to level it.
4. For the topping, whip the cream to a soft peak and whip in the icing sugar and vanilla. Spread this over the chocolate cream and serve.
The crust and chocolate cream can be prepared a full day in advance, but the topping should be made within 4 hours of serving.

Red Velvet Whoopie Pies (a Bisquick recipe)
Cookies:
2 tbsp butter softened
1/2 cup granulated sugar
1 1/2 cups Original Bisquick baking mix
2 tbsp unsweetened cocoa
1 egg
1 tsp vanila
1/3 cup milk
2 tsp red food colour
Filling:
4 oz (125g) cream cheese softened
1/4 cup butter
1/2 tsp vanilla
1 1/4 cups powdered sugar (icing sugar)
1. heat oven to 350F, line 2 large cookie sheets with parchment paper or silicone mats (or grease with cooking spray)
2. In medium bowl, beat 2 tbsp of butter and the granulated sugar with electric mixer until light and fluffy. Add remaining cookie ingredients and beat until well combined.
Drop by tablespoonfuls of dough onto cookie sheet, leaving 2 inches in between them. I ended up with 14 cookies (7 pies) but if you make them with a tablespoon sized measure you should get 28 cookies (14 pies)
3. Bake for 8-10 minutes or until tops spring back when lightly touched. Cool completely.
4. Combine the cream cheese with the 1/4 cup of butter and beat together, add the remaining filling ingredients and beat well until smooth and creamy.
5. For each whoopie pie, spread 1 generous dollop of filling on the bottom of 1 cookie and place a second cookie, bottom side down, on filling.
Store in refrigerator.

INGREDIENTS:
For the whoopie pies:
• 2 cups pastry flour (
• 3 tbsp cocoa powder (
• 1/2 tsp baking soda
• 1/4 tsp salt (
• 1/2 cup butter (at room temperature)
• 1/3 cup granulated sugar
• 1 egg
• 1 tsp vanilla extract
• 1/2 cup buttermilk
• 3 tbsp black gel food coloring
For the filling:
• 4 oz cream cheese
• 1/4 cup butter (at room temperature)
• 1 tsp vanilla extract
• 3 tbsp powdered sugar
• a few drops of orange gel food coloring
INSTRUCTIONS:
1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
2. In a bowl, whisk together flour, cocoa powder, baking soda, and a pinch of salt. Set aside.
3. In another bowl, beat butter, sugar, egg, and vanilla until well combined.
4. Gradually add the dry mixture to the wet one, alternating with buttermilk. Stir in black food coloring.
5. Spoon 1 tbsp of batter onto the baking sheet, spacing them 2 inches apart.
6. Bake for 7-12 min until set. Cool for 5 min, then transfer to a wire rack.
7. For the filling, mix cream cheese, butter, vanilla, powdered sugar, and orange food coloring.
8. Spread filling on one cookie, top with another. Repeat with remaining cookies and filling.

Ingredients:
Pie Crust:
•1 pie crust, baked and cooled (see How to Make a Regular Pie Crust)
Filling:
•1 ½ sticks softened butter
•1 ½ cups sugar
•4 ounces softened cream cheese
•1 tablespoon red food coloring
•1 teaspoon vanilla extract
•5 tablespoons cocoa powder
•5 room temperature eggs
Topping:
•1 ½ cups semi sweet chocolate chips
•vanilla whipped cream (see How to Make Banana Pudding)
Directions:
Filling:
•Place in a mixing bowl the softened butter and sugar.
•Cream for 10 minutes or until light and fluffy.
•Add the softened cream cheese and cream for 3 minutes.
•Add the red food coloring and vanilla extract and mix until incorporated.
•Add the cocoa powder and room temperature eggs and mix for 10 minutes.
•Pour the filling into a baked and cooled pie crust.
•Refrigerate for at least 4 hours.
Topping:
•Microwave the semi sweet chocolate chips for about a minute.
•Stir the chocolate chips until smooth.
•Pour the chocolate into an icing bag with a #1 tip attached.
•Pipe out the desired designs on to a parchment paper lined cookie sheet.
•Refrigerate the chocolate designs for at least 45 minutes.
•Put vanilla whipped cream in an icing bag with a start tip attached.
•Pipe stars around the edge of the filling.
•Remove the chocolate designs from the parchment lined cookie sheet and place on the red velvet pie.
