Asian stir fried vegetables
It’s hard to pass on a plate of freshly stir-fried vegetables. Especially Asian style cooked in a hot wok. You can still use a frying pan on your domestic stove.
This recipe is so simple, quick to make and makes a great side dish to any Asian meal. If going meatless, you could easily make this your complete meal with a serve of rice. There’s plenty of nourishment and it’s a well-balanced healthy meal.
It’s best to first blanch the broccoli and carrots, but don’t overcook them, you still want to retain a bit of bite after stir frying. If you have a powerful wok burner, crank it up at the very end to get that smoky flavour. If not, don’t worry the verges will still be amazing! Always serve immediately, hot of the wok.

INGREDIENTS:
2 tbsp cornstarch
1/4 cup water
2 tbsp soy sauce
1 tsp sugar
2 tsp red chilly sauce
1 tsp vinegar
2 tbsp oil
1 tsp finely chopped garlic
1 tsp finely chopped ginger
1 slit green chillies
10-12 brocolli florets
2 small sliced carrots
6-8 baby corns slit
6-8 beans slit
1 onion cut in cubes
2 capsicum cut into cubes
6-8 chopped mushrooms
1 cup chopped cabbage
1/2 cup tofu pieces
salt to taste
pepper to season

Ingredients :
Oil (for frying)
Some chopped veggies (Mushroom, Carrot, Broccoli Florets, Baby Corns, Bell Peppers, Zucchini)
1 medium sized Onion, cut into cubes
2 tbs Soya Sauce
2 tsp Vinegar
2 tsp Brown Sugar
Crushed Black Pepper
Salt to taste
3-4 finely chopped Garlic Cloves
Finely chopped Green Chillies (as per taste)
Tofu (cut into cubes and tossed in little Oil)
Method :
Heat up the pan, add Oil (alternatively Olive Oil can be used)
Dilute 2 tbs Soya Sauce with 2 tsp Vinegar and 2 tsp Brown Sugar (keep it aside)
Add crushed Black Pepper and Salt to taste into this mixture
Further add 3-4 finely chopped Garlic Cloves
Add finely chopped Green Chillies (as per taste)
Add chopped Mushroom and saute
Then add chopped Carrot, Baby Corn and Broccoli
Add 1 medium Onion, cut into cubes
Cook for 5-7 min until it's light golden-brown
Now add Tofu, slightly roasted in Oil
Add chopped Zucchini and Bell Peppers
Add Soya Sauce mixture
Cook for another 5 min and it's done

This chunky veggie stir fry is healthy, nutritious and easy to make. I made it a couple of weeks ago for my Mom’s small birthday party and thought you would appreciate a vegan, veggie dish to start off the new year with. Once the veggies are prepped and chopped, the rest is very easy and comes together quickly.
You can serve this as a side this for the family during the week or serve at a backyard bbq or party. My guests have always appreciated this side dish and I am sure yours will too.
