How To make Chicken Pesto Vegetable Stir Fry with Fettuci
2 Whole broiler-fryer chicken
-breasts, -halved, boned, skinned, -cut in bite-sized pieces 1 cn (10 3/4 OZS.) chicken
-broth 3/4 c Prepared pesto
3 tb Tomato sauce
1 tb Chicken-flavored bouillon
-granllles 1/4 ts Salt
1/4 ts Pepper
5 ts Butter, divided
1 tb . olive oil
1 1/2 c Cauliflower florets
1 1/2 c Broccoli florets
2 md Zucchini, quartered
-lengthwise, cut in 1-inch -slices 2 md Carrots, sliced diagonally
2 tb Red wine
1 pkg. (12 Os.) fettucine, cooked according to package
directions 1/4 cup Parmesan cheese, freshly grated In medium bowl, mix together broth, pesto, tomato sauce, bouillon granules, salt and pepper; set aside. In large fry pan, place 2 tablespoons of the butter; add olive oil and heat to medium-high temperature. Add chicken, cauliflower, broccoli, zucchini and carrots; cook, stirring, about 10 minutes or until chicken is brown and chicken and vegetables are fork tender. Stir in pesto mixture and wine; bring to a boil. Reduce heat to low and simmer about 3 minutes. Remove from heat; set aside. Add remaining 3 ta blespoons of butter to fettucine, tossing to coat. Place fettucine in large shallow dish; spoon chicken mixture over fettucine. Sprinkle with Parmesan cheese. Makes 6 servings. From the files of Al Rice, North Pole Alaska. Feb 1994 -----

Ingredients
for 4 servings
1 tablespoon oil
salt, to taste
1 lb large chicken breast, cooked and diced (453 g)
2 cups asparagus, cut into 1 1/2-in/38-mm pieces (250 g)
10 oz cherry tomatoes, halved (285 g)
⅔ cup pesto (150 g)
2 cups whole wheat penne, measured dry (200 g)
parsley, for garnish

Preparation
Heat the oil in a large nonstick skillet. Toss in the asparagus, season with a bit of salt, and sautée until the begin to soften, about 3 minutes.
Pour on the pesto, pasta, and chicken and stir to combine.
Toss in the cherry tomatoes and give everything a stir to combine and warm through.
Distribute pasta mixture evenly between 4 tupperware containers.
Top with parsley for garnish.
Can be refrigerated up to 4 days.

????Cheesy garlic chicken bites cooked in one pan with broccoli and spinach in under 15 minutes. This quick tasty dish is a great keto option and can be served with rice, zoodles or Pasta!
✳️ Ingredients ✳️
1 pound chicken breasts cut into 1'' pieces
2 tablespoons olive oil
1 teaspoon Italian seasoning
1/4 teaspoon crushed pepper optional
salt and pepper to taste
3-4 cloves garlic minced
1/2 cup tomatoes chopped
2 cups broccoli florets
2 cups baby spinach
1/2 cup shredded cheese mozzarella, cheddar, parmesan, or favorite melting cheese
4 oz cream cheese
✳️ Instructions ✳️
Heat 2 tablespoons olive oil in a large saucepan over medium-high heat. Add the chopped chicken breasts, season with Italian seasoning, crushed red pepper, and salt & pepper. Sautee for 4-5 minutes or until chicken is golden and cooked through.
Add the garlic and saute for another minute or until fragrant. Add the tomato, broccoli, spinach, shredded cheese, and cream cheese. Cook for another 3-4 minutes or until the broccoli is cooked through.
Serve with cooked pasta, rice, zucchini noodles or cauliflower rice.

Chicken and Chorizo Pesto Fettuccine- something so simple and satisfying but puts a smile on Baes face - and yes that pesto is fresh since the only thing I seem to bottle up these days are my feelings ????????
My shortcut for the night? I had some fettuccine in the pantry and decided to use it. Chorizo from my butcher, a juicy chicken breast seared in the pan, rested then sliced (I’m not the type to throw raw chicken into the fry pan chopped, that’s how it gets dry.
Salty pasta water like the sea, fresh pine nut pecorino and parmesano reggiano, garlic oil and extra fresh shaved pecorino on top!
