Authentic Kerala Dishes With My Personal Touch ????
Ingredients
Potato - 2
Beans -6
Carrot -1
Cinnamon -1
Cloves -3
Cardamom -2
Bay Leaf -1
Coconut Oil -1tbsp
Ginger -Small piece
Garlic -3
Onion -1
Green Chilli -4
Curryleaves -
Salt -
Water -1cup
Garam Masala -1/2 tsp
Pepper Powder -2 pinch
Coconut Milk -1 1/4 to 11/2 Cups
For Garam Masala
Cardamom -5
Cloves -15
Cinnamon -2
Star Anise -2
Fennel Seeds-1tsp
mETHOD
Take a wok add some coconut oil . also add a bay leaf, cloves,cinnamon and cardamom. Saute it. Add sliced onion, ginger , garlic, curry leaves and green chillies. Add some salt. Let the onions become translucent. Add the veggies- Potato ,carrot and beans. Saute it. Add this to the cooker and allow for 1 whistle. Add water and the ground garam masala mix to the cooker.
Turn on the heat. Add the coconut milk. Check the spices and salt. After turning of the heat add a pinch of garam masala and pepper powder. Add curry leaves and sprinkle some coconut oil. Close the lid and keep.
For garam masala powder :- grind the spices together to a fine powder. Cardamom, cloves , cinnamon,star anise and fennel seeds.

Kerala Style Vegetable Stew for Appam, Idiyappam | Vegetable Ishtu | വെജിറ്റബിൾ ഇഷ്ടു തയ്യാറാക്കാം
A stew is a dish made of vegetables or meat that are cooked slowly in liquid. In Kerala style stew recipes, the solid ingredients are mostly cooked in coconut milk. In Malayalam. it is also called 'Ishtu'. Unlike many curry recipes from Kerala, this dish is mild in spice level and have a slight sweet taste from the coconut milk.
In this video, you will see how a typical Kerala Vegetable Stew is made. This 'Ishtu' makes a classic combination with Appam, Idiyappam and bread.

⭐️ Here's a delicious and easy lentil vegetable soup with a rich and hearty tomato base and nourishing green or brown lentils.
This recipe is made with simple ingredients, excellent for weeknight dinners and meal prep, and a healthy and wholesome homemade meal.
⭐️ Ingredients
2 tablespoons extra virgin olive oil
2 carrots
1 onion
1 stalk celery
1 teaspoon cumin
4 cloves garlic
6 cups vegetable broth
2 cans (15-ounce each) diced tomatoes
1 cup lentils uncooked, green or brown
1 teaspoon thyme dried
1 teaspoon oregano dried
1½ teaspoons salt or more to taste
¼ teaspoon black pepper or red pepper flakes
5 ounces spinach (about 4 to 5 cups)

2 tablespoons extra virgin olive oil

1 stalk celery
1 teaspoon cumin
4 cloves garlic
1,5 liters vegetable broth
800 grams diced tomatoes
220 grams lentils uncooked, green or brown
1 teaspoon thyme dried
1 teaspoon oregano dried
1½ teaspoons salt or more to taste
¼ teaspoon black pepper or red pepper flakes
150 grams spinach (about 4 to 5 cups)

Sambar Chilli- 1 Number
Green Chilli- 1 Number
Ginger (Finely Chopped)- 1 Tbs
Coconut Oil- 1 1/2 Tbs

Learn how to make authentic Kerala Style Vegetable Stew at home from our Chef Smita only on Rajshri Food.
Kerala Style Vegetable Stew is easy to make, light on stomach, simple yet delicious on taste and absolutely healthy. Ideally it goes well with appams, but if you can't have it with appams, you can have it with steamed rice and it tastes yum! Try this simple and delicious curry at home and post your comments below.
INGREDIENTS
1 carrot cubed
1 cup green peas
2 medium potatoes peeled and cubed
1 cup of cauliflower florets
1 cup of French beans cut into 1”
2 medium onions sliced
5 green chillies finely chopped
1 tbsp ginger and garlic paste each
10 peppercorns
1” cinnamon
4 green cardamoms
2 ½ cups of coconut milk
¼ cup soaked cashewnuts ground to a paste
Few curry leaves
Salt to taste
2 tbsp coconut oil
METHOD:
- Heat oil and add the splutter the spices. Add the onions, chillies and ginger garlic paste and sauté till the onions turn pink. Add the vegetables and little water, salt and cook till the vegetables are done
- Then add the thick coconut milk, cashewnut paste and boil the curry
- Garnish with the curry leaves and serve with appams or steamed rice.

VEGETABLES STEW
PREP TIME: 10 MINUTES
COOK TIME: 20- 25 MINUTES
SERVES: 4-6
INGREDIENTS
4 large Tomatoes , chopped
2 medium size Onions
200g Tomato Paste
1 large Smoked salmon
10 Green chilli
7 cloves of Garlic
3 Carrots, sliced.
2 Green Bell Pepper, diced.
2 Yellow Bell Pepper, diced.
2 Red Bell pepper, diced.
1 bundle French Beans, sliced.
Thyme
2 Bay Leaves
150ml Oil
1 cube Shrimp seasoning
1 tsp Salt
DIRECTION
- Pour oil into saucepan over medium heat, then add onion, stir and
let sweat for a minute.
- Add tomato paste, stir and cook for 5-7 minutes.
- Blend tomatoes, green chilli, onions, garlic and pour mixture into
sauce, stir and let simmer down for 10 minutes.
- Add shrimp seasoning, stir then add carrots, cover and let cook
for 2 minutes.
- Add green bell pepper, yellow bell pepper, red bell pepper, french
beans, stir then add smoked salmon.
- Add thyme, bay leaves, stir then add salt and let simmer down for
3 minutes.
- Ready to serve.
