How To make Balkan Vegetable Stew
1/4 cup oil
2 medium onions
sliced
2 cloves garlic :
minced
1 cup vegetable broth
1 1/2 teaspoons salt
1/2 teaspoon each thyme and basil
1/4 teaspoon pepper
4 carrots sliced thin
1 small zucchini :
sliced thin
4 medium diced
2 cups cut green beans
1 small eggplant :
cubed and unpeeled
1 large green pepper cut in strips
1 small head cabbage
1 small head cauliflower :
florets
1 can (16 oz.) tomatoes cut up

Toasted Walnut Sauce 2 slices white bread :
crust removed
1 cup walnuts -- shelled
1/2 teaspoon salt
1/8 teaspoon pepper
3/4 cup milk
In medium saucepan in hot oil saute onions and garlic 3 minutes. Add broth, sa lt, thyme, basil and pepper. Combine remaining ingredients except Sauce in lar ge casserole (shred cabbage coarse). Bring broth mixture to boil and pour over vegetables . Cover; bake in preheated oven (350 degrees) for 30 minutes or un til vegetables are tender. Serve hot or cold with Toasted Walnut Sauce. Make 6 servings. Per serving: 263 cal., 9 g pro., 39 grams car., 9 g fat, 3 mg. ch ol.
TOASTED WALNUT SAUCE: Soak bread in water to cover until well saturated. In heavy skillet over mediu m heat, cook walnuts 5 to 7 minutes, stirring occasionally, until lightly toast ed. Drain bread, squeeze dry. In blender or food processor grind walnuts fine. Add bread, salt, pepper and half milk. Continue whirling until smooth. Gradu ally add remaining milk to give thick yet smooth, pourable sauce.
Good served with green salad, hot rolls.

Kad Austrijancima spomenem varivo od graha, odmah pomisle na kauboje koji sjede za logorskom vatrom i jedu grah iz malih šerpica. Na Balkanu je to hrana ne samo za „prave muškarce“ nego i za čitavu porodicu. Ovo ukusno varivo je pripremljeno po jednom od tradicionalnih recepata i jako je hranjivo. Kod nas se grah priprema tokom cijele godine, ljeti ga jedemo uz zelenu a zimi uz kiselu salatu.

Ingredients:
500 g dried quail beans
300 g beef or veal
2 onions
3-4 garlic cloves
3 carrots
1 can of chopped tomatoes
2-3 bay leafs
2-2,5 l water
2 cubes of beef broth
evtl. 200 g of „pastrma“(air dried beef)
salt, pepper, vegeta natur
Roux:
6 tbsp sunflower oil
1 heaped tbsp flour
2 heaped tsp pepper powder (I’m using a mix of sweet and smoked)

The dish is called djuvech (đuveč). Many call it Balkan ratatouille.
Balkan ratatouille (đuveč) is a rich vegetarian dinner dish. (Meat lover? Add grilled chicken or beef on the side.) I've added meat now, but you don't have to.
There are several ways of making Balkan ratatouille. Usually it involves sautéing and simmering several vegetables on low over long time and (in some cases) throwing it in the oven for a final touch. (French versions almost always involve baking at the end.)
Vegetables are well represented in sauces and stews in Balkan cuisine, and this dish is no exception. It welcomes whatever you give it: onion, garlic, carrot, eggplant, zucchini, tomatoes… and the combo stews until veggies are, in Jamie Oliver’s words, “reduced, sticky and sweet.”

Ingredients:
800 g of chicken white meat
1 kg of vegetables mixture (red pepper, green beans, carrot)
1 dcl oil
1 onion
1 spoon sugar (i added 2 tablespoons because we love sweeter)
1 teaspoon salt
1/4 cup rice
2 small potatoes chopped into small pieces
8 dcl tomato juice
1 dcl of water
Step by step:
1.Cut the meat into slices
2.Coat them with dry spice
3.Grease the grill pan with oil
4.Toast the meat
5.Sprinkle a little oil
6.Chop the onion
7.Add oil
8.Fry the onion
9.Add the vegetable mixture
10.Stew
11.Add tomato sauce
12.Add sugar
13.Add salt
14.Coat the pan
15.Arrange the order of the meat
16.Order of vegetable mixture
17.Sprinkle a little water
18.Add the potatoes
19.Rice
20.Again a row of meat
21.The rest of the vegetable mixture
22.Some more water
23.Rice
24.Bake at 220 degrees for 1 hour
German:
Zutaten:
800 g weißes Hühnerfleisch
1 kg Gemüsemischung (Paprika, grüne Bohnen, Karotte)
1 dl Öl
1 Zwiebel
1 Löffel Zucker (ich habe 2 Esslöffel hinzugefügt, weil wir es süßer mögen)
1 Teelöffel Salz
1/4 Tasse Reis
2 kleine Kartoffeln in kleine Stücke geschnitten
8 dl Tomatensaft
1 dl Wasser
Schritt für Schritt:
1. Fleisch in Scheiben schneiden
2. Coat sie mit trockenem Gewürz
3.Die Grillpfanne mit Öl einfetten
4.Toasten Sie das Fleisch
5.Sprinkle ein wenig Öl
6.Zwiebel hacken
7.Öl hinzufügen
8.Die Zwiebel anbraten
9.Gemüsemischung hinzugeben
