Ingredients:
To Season & steam Chicken
1lbs - Chicken Thighs, you may use breast if you prefer
1 - Spice Blend Cube ( optional) if you have it great ????????
Chicken Seasoning - tt
Salt - tt
•Also add a bit of your blended up ingredients
To Make Tomato Sauce For Stew
1 - Medium- Large Onion
1 - Habanero or Scotch Bonnet Pepper
1 - Red Bell Pepper
2 - Garlic Cloves or tt
4 - Fresh Tomatoes
1 - 28oz can Crushed Tomatoes (optional) you may use only fresh ones????
To Start Stew
1 - Extra large Onion or 2 medium to large ones
2 - Habanero or Scotch Bonnet Pepper
Ginger - About 2 thumb sized
•Blend half of the onion with your pepper and ginger and set aside to for stew and to steam chicken
Additional Ingredients
Oil - for cooking
Chicken Seasoning - tt
Salt - tt

Cumin - a sprinkle
Thyme - a sprinkle
Clove - a sprinkle
Sage - a sprinkle

1cup - String Beans cut
1 - Red Bell Pepper
1 - Yellow Bell Pepper

1 - Orange Bell Pepper
4 - Green Onions
1cup - Cabbage cut
1cup - Carrots cut

Cardamom (ഏലക്ക) - 4 Nos
Clove (ഗ്രാമ്പൂ) - 6 Nos
Cinnamon Stick (കറുവപ്പട്ട) - 3 Inch Piece
Ginger (ഇഞ്ചി) - 1 Inch Piece
Green Chilli (പച്ചമുളക്) - 3 to 4 Nos
Onion (സവോള) - 1 No
Curry Leaves (കറിവേപ്പില) - 2 Sprigs
Salt (ഉപ്പ്) - 1¼ Teaspoon
Potato (ഉരുളക്കിഴങ്ങ്) - ½ Cup
Carrot (കാരറ്റ്) - ½ Cup
Green Beans (ബീൻസ്) - ¼ Cup
Cauliflower (കോളിഫ്ലവർ) - ½ Cup (Optional)
Water (വെള്ളം) - 1½ Cup (375 ml)
Thick Coconut Milk (കട്ടി കൂടിയ തേങ്ങാപ്പാൽ / ഒന്നാം പാൽ) - 1 Cup (250 ml)
Crushed Black Pepper (ചതച്ച കുരുമുളക്) - ¾ Teaspoon

Vegetable Stew
Ingredients:
Oil - 1 1/2 tbsp
Bay Leaf - 2 nos
Cinnamon - 1 stick
Cloves - 3 to 4
Cardamom - 3 nos
Onion - 1 no. thinly sliced
Green Chilis - 3 nos slit
Potato - 1 no.
Carrot - 1 no.
Few Beans
Cauliflower
Green peas
Diluted Coconut Milk (Thin)
Concentrated Coconut Milk (Thick)
Few Curry Leaves
Salt to taste
Method:
1. Take a deep sauce pan. ( Buy : )
2. Pour 1 1/2 tbsp of oil.
3. Add bay leaf,piece of cinnamon,few cloves and 3 cardamom.
4. To this, add 1 sliced medium sized onion and 3 slit large green chilis and stir well.
5. Once the onions are transparent, add one evenly cut-up vegetables (potato, carrot, beans, cauliflower florets and green peas).
6. Add salt to this and stir well.
7. Pour the diluted coconut milk to cook the vegetables.
8. Pour water and then add curry leaves. Close the pot and let it cook for 15 to 20 mins or till vegetables cooked completely.
9. Finally pour thick coconut milk.
10. Keep it on low flame and cook for a 30 seconds and turn off the stove.
Side dish for Stringhoppers (Idiyappam),Appam or Dosa.

Healthy Veggie Stew Recipe ???? Easy One Pot Meal
As soon as it gets cold out I just want warm, comforting meals! This amazing veggie stew definitely checks all the right boxes for me. Comforting, delicious and can be made in one pot!

Amazing Veggie Stew Recipe:
4 potatoes, chopped
4 carrots, chopped
1 onion, chopped
4 celery stalks, chopped
Chop veggies and sauté for 10-15 minutes using veggie broth.
Stir and add veggie broth as you go so it doesn’t stick.
4 cloves of garlic
1 tbsp thyme
1 tbsp rosemary
1 tbsp garlic powder
1 tbsp onion powder
4 bay leafs
1 tsp ginger powder
Add spices to the bottom of the pot and sauté for 5 minutes.
Add 8 cups of low sodium veggie broth.
Simmer for 20 minutes.
Remove 4 cups of cooked mixture and blend.
Add back into pot along with:
1 cup of uncooked pearl barley (you can use white rice, lentils, pasta, quinoa)
3 cups (2 cans) of white Navy beans
2 cups frozen corn
Cook for another 20 minutes.
Add 2 Cups frozen peas and cook for another 5 minutes.
Remove from heat and allow to cool a bit so it thickens and set’s up.
Add salt to taste.
Enjoy!
