How To make Vegetable Lasagna "Curls"
12 Lasagna noodles
1 lb Tofu cottage cheese
2 c Broccoli flowerets
1 c Mushrooms; chopped
2 Green onions; diced
2 tb Basil, fresh; chopped
1 ts Oregano, fresh; chopped
1 tb Parsley, fresh; chopped
2 c Marinara sauce
2 tb Nutritional yeast flakes
Preheat oven to 375 deg F. Cook lasagna noodles in a large saucepan until tender but firm, 8-10 minutes. Drain, rinse and keep in cold water until ready to use. Mix remaining ingredients in a medium size bowl. Place one-twelfth of the mixture on each lasagna noodle and roll up to enclose filling. Spray baking dish with nonstick cooking spray and place rolls seam-side down in dish. Cover with marinara sauce and bake 20 minutes, covered. Remove cover, and bake 20 minutes more. Soy Curls, Black Bean, Spinach Quesadillas AWESOME
Believe it or not, we get tired of eating beans and rice in a bowl. Max suggested we make quesadillas using black beans, soy curls and salsa. Lucky for him, I had copied a soy curls recipe from Julie Hasson's Vegan Casserole cookbook and was looking for a way to put my own spin on it.
Here's the list of ingredients and their measurements for all that went into these quesadillas. It may look like a lot but really I used the basic Tex-Mex spice combos. I'll bet you have everything you need in your spice collection already.
Seasoned Soy Curls
2 - 3 handfuls long soy curls
1/2 teaspoon ground cumin
3/4 teaspoon curry powder
1 1/2 teaspoons onion granules
1 teaspoon New Mexican chili powder
1 teaspoon dried cilantro leaves
1/4 teaspoon ground black pepper
1/2 teaspoon salt
1 large garlic clove, crushed
Seasoned Spinach
1 small onion, chopped
1 large garlic clove, minced
3 large handfuls fresh baby spinach
1/2 teaspoon ground cumin
1/4 teaspoon ground black pepper
1 teaspoon New Mexico chili powder
2 teaspoons dried cilantro leaves
1/4 cup salsa
black beans, cooked, semi-drained and semi-mashed
your favorite flour tortillas
guacamole if you have it
