How to Make Veggie Lasagna - Easy Vegetable Lasagna
This vegetable lasagna recipe is a reader favorite! Tender vegetables, a light and flavorful tomato sauce, and lots of cheese make this the best veggie lasagna ever. I know that saying this is the “best lasagna ever” is a bold statement, but we genuinely believe it. I love lasagna in all its forms. We’ve shared a variety of them, but this one is the one that’s our most popular.
Veggie Lasagna Ingredients (the recipe is on Inspired Taste)
• 14 lasagna noodles
• 2 tablespoons extra-virgin olive oil
• 1 cup (140 grams) chopped onion
• 1 tablespoon minced garlic, 3 to 4 cloves
• 1/8 teaspoon crushed red pepper flakes, or more to taste
• 2 medium zucchini, cut into 1/2-inch pieces
• 2 medium yellow squash, cut into 1/2-inch pieces
• One (12-ounce) jar roasted red peppers, drained and cut into 1/2-inch pieces, 1 heaping cup
• 1 (28-ounce) can crushed tomatoes
• Generous handful fresh basil leaves, chopped
• One (15-ounce) container ricotta cheese or cottage cheese
• 2 large eggs
• 2 ounces (60 grams) parmesan cheese, grated, about 2/3 cup
• 8 ounces (230 grams) low-moisture mozzarella cheese, shredded, about 2 cups
• Salt and fresh ground black pepper, to taste

- 1 Pepper
- 1 Aubergine
- 1 Head of broccoli
- 1 Courgette
- Olive oil
- 1 Large onion
- 2 Garlic cloves
- 1 Can plum tomatoes
- 1 tbsp Dried oregano
- 1 tbsp Tomato puree
- Salt and pepper
- 25g Butter
- 25g Plain flour
- 300ml Milk
- 1 tsp Ground nutmeg
- Dried pasta sheets
- 65g Grated cheddar cheese
Vegetable Lasagna - How to Make the BEST Vegetarian Lasagna
The ULTIMATE VEGETABLE LASAGNA! Saucy, cheesy and packed with fresh vegetables, it’s healthy and epically delicious! ⬇️⬇️⬇️⬇️ CLICK FOR RECIPE ⬇️⬇️⬇️⬇️
✅VEGETABLE LASAGNA INGREDIENTS:
➤1 ½ T olive oil
➤1 sweet potato, diced
➤2 red bell peppers chopped
➤1 red onion, diced
➤1 zucchini, chopped
➤1 tsp dried basil
➤¾ tsp kosher salt, divided
➤2 (24-ounce jars) tomato pasta sauce
➤2 tsp balsamic vinegar
➤10 oz. frozen spinach, drained and squeezed dry
➤15 oz. part-skim ricotta cheese
➤2 c shredded Mozzarella, Fontina, or Provolone
➤½ c freshly grated Parmesan cheese, divided
➤1 large egg
➤9 oven-ready (no boil) lasagna noodles
DIRECTIONS:
1. Preheat the oven to 400 F. Coat a 9×13-inch baking dish with nonstick spray.
2. Heat the oil in a large, deep skillet or Dutch oven, then add the sweet potato, onion, bell pepper, zucchini, basil, and 1/2 tsp. salt. Cook until the vegetables are tender, about 10 min.
3. Add the sauce and vinegar to the vegetables. Let simmer, stirring occasionally, for 10 min.
4. In a separate bowl, stir together the ricotta, ¼ c Parmesan, egg, and remaining ½ tsp salt. Add the spinach and break it up with a fork to combine.
5. Assemble the lasagna as follows: thin layer of sauce, 3 noodles, ⅓ of the remaining sauce, 1/2 of the ricotta mixture, the next ⅓ sauce, ½ cup of the mozzarella, 3 noodles, remaining ricotta mixture, 1/2 c. mozzarella, 3 noodles, remaining sauce, remaining 1 c. mozzarella and 1/4 c. Parm.
6. Cover and bake 25 min. Uncover, rotate 180 degrees, and bake 15 to 20 additional min, until hot and bubbly. Let rest 15 minutes, sprinkle with fresh basil, and enjoy!

Preparation time 10 minutes
Cooking time 10-15 minutes
Serve 2-4
Ingredients
For Filling
2 tsp Olive oil, जैतून का तेल
1 tbsp Butter, cubed, मक्खन
2-3 Garlic cloves, finely chopped, लहसुन
1 inch Ginger (peeled & finely chopped) अदरक
2 large size, Onion, roughly chopped, प्याज
2 large size, Tomato, chopped, टमाटर
2 medium size, Carrot (peeled, dice) गाजर
10-12 French beans, dice, फ्रेंच बीन्स
½ cup Cauliflower, cut into florets, फूलगोभी
½ cup fresh Tomato puree, ताज़े टमाटर की प्यूरी
Salt to taste, नमक स्वादअनुसार
¼ tsp Sugar, चीनी
1 tsp Black peppercorns, crushed, काली मिर्च पाउडर
For Assembling
2 tbsp Tomato ketchup, टाॅमेटो केचप
few Basil leaves, roughly torn, तुलसी के पत्ते
2-3 tbsp Pizza Cheese blend, चीज़
2-3 leftover Chapati, बची हुई चपाती
1 tbsp Tomato ketchup, टाॅमेटो केचप
few Basil leaves, roughly torn, तुलसी के पत्ते
Prepared Filling, तैयार की हुई फिलिंग
few Coriander sprig, धनिया पत्ता
½ tsp Oregano, ओरिगैनो
½ tsp Chili flakes, चिली फ्लेक्स
1-2 tbsp Pizza cheese blend, चीज़
1 tbsp Butter, cube, मक्खन
For Garnish
1 Tomato, slice, टमाटर
few Basil leaves, तुलसी के पत्ते
½ tsp Black peppercorns, crushed, काली मिर्च पाउडर
1 tsp Olive oil, जैतून का तेल
Process
For Lasagna
● In a sauce pot, add oil, butter it gets hot then add ginger, garlic, onion and saute it well.
● Add tomatoes and saute for 10-12 seconds on moderate heat.
● Now, add carrot, french beans, cauliflower, tomato puree, salt to taste, sugar, crushed black peppercorns and saute it for 10-12 seconds and cover it with the lid and let it cook for 4-5 minutes on moderate heat.
● Once vegetables cook well, then switch off the flame and keep it aside for further use.
●
For Assembling
● In a lasagna pan/baking tray/heavy bottom pan, spread some tomato ketchup and on top of that put some torn basil leaves. Then, add blended cheese to it.
● Now, place the leftover chapati on top and repeat the process again.
● After that add the prepared filling and top it up with Pizza cheese blend, tomato ketchup, coriander sprig, and sprinkle aregano & chili flakes to it.
● Now, again place the leftover chapati on top and add prepared filling to it and finish it with pizza cheese blend and butter.
● Then, bake the lasagna for 3 mins in the microwave.
● Now, garnish it with the sliced tomato, a few basil leaves, crush peppercorn and put in some olive oil.
● And serve hot.

Lasagna is definitely one of my top favorite food, if not my number one favorite. Since I was a kid, I always loved Lasagna. Even if this lasagna is meatless, it completely satisfies me as a traditional meat lasagna would.
To make this vegetarian Lasagna vegan, you can make the bechamel using plant-based milk and oil instead of butter and swap the cheese with your favorite vegan cheese.
