I haven't been a vegetarian for an awfully long time so trying to find yummy healthy recipes that still add up to some of the yummy things I used to eat is sometimes kind of hard. But something that has always been dear to my heart is lasagna. I love the cheesy, tomato-y goodness. This lasagna is made entirely meatless and it's freaking fantastic.

Veg Lasagna Recipe | No Oven Recipe | बिना अवन के लज़ान्या बनाओ घरपे | Chef Sanjyot Keer
Full written recipe for Veg lasagna
For red sauce:
Ingredients:
· Olive oil 2 tbsp
· Onion 1 nos. medium sized (chopped)
· Garlic 1 tbsp (chopped)
· Kashmiri red chilli powder 1 tsp
· Tomato puree 2 cups (fresh0
· Tomato puree 200gm (market bought )
· Salt to taste
· Chilli flakes 1 tbsp
· Oregano 1 tsp
· Sugar 1 pinch
· Black pepper 1 pinch
· Basil leaves 10-12 leaves
Method:
· Set a pan on high heat & add the olive oil & let it heat nicely.
· Further add onions & garlic, stir & cook on medium flame for 2-3 minutes until the onions turn translucent.
· Now add kashmiri red chilli powder & stir it lightly then add tomato purees, salt, chilli flakes, oregano, sugar & black pepper, stir everything well, cover & cook on low flame for 10-12 minutes.
· Further add the basil leaves by tearing then with your hands & stir well.
· Your red sauce is ready.
For white sauce:
Ingredients:
· Butter 30gm
· Refined flour 30gm
· Milk 400gm
· Salt to taste
· Nutmeg 1 pinch
Method:
· Set a pan on high heat, add the butter into it & let it melt completely, then add the flour & stir it well with the spatula & make sure you lower the flame & cook for 2-3 minutes, the texture of it will change from doughy to sandy.
· Further add the milk in 3 batches while continuously whisky it, it should be lump free, cook until the sauce thickens & becomes smooth.
· Now add salt to taste & nutmeg, stir well.
· Your white sauce is ready.
Sauteed veggies:
Ingredients:
· Olive oil 2 tbsp
· Garlic 1 tbsp
· Carrot 1/3 cup (diced)
· Zucchini 1/3 cup (diced)
· Mushroom 1/3 cup (chopped)
· Yellow bell pepper ¼ cup (diced)
· Green bell pepper ¼ cup (diced)
· Red bell pepper ¼ cup (diced)
· Corn kernels ¼ cup
· Broccoli ¼ cup (blanched)
· Sugar 1 pinch
· Oregano 1 tsp
· Chilli flakes 1 tsp
· Salt to taste
· Black pepper 1 pinch
Method:
· Set a pan on high heat & olive olive, let it heat well & then add garlic, stir & cook for 1-2 minutes on medium flame.
· Further add carrots & zucchini, stir well & cook on medium flame for 1-2 minutes.
· Now add all the remaining vegetables & ingredients, stir well & cook for 1-2 minutes.
· Your sauteed veggies are ready.
For lasagna sheets:
Ingredients:
· Refined flour 200gm
· Salt 1/4 tsp
· Water 100-110 ml
Method:
· In a large bowl add the refined flour along with the remaining ingredients & add water in batches to make a semi-tough dough.
· Once the flour comes together after mixing, cover it with a damp cloth & let it rest for 10-15 minutes.
· After the dough has rested, transfer it onto the kitchen platform & knead it well for 7-8 minutes, the texture of the dough should become smooth, cover it with a damp cloth & let it rest for half an hour again.
· Once the dough has rested divide it into 4 equal parts & form them into roundels.
· Further, place the roundel onto a flat surface & roll it into a thin chapati using a rolling pin, keep dusting flour if it sticks to the rolling pin.
· Once you have rolled it out, trim the edges using a knife to form a large rectangle, dive the rectangle into smaller, equal sized rectangles.
· Your lasagna sheets are ready.
To make the makeshift oven:
· Take a large handi & spread ample amount of salt in it, place a small ring mold or cookie cutter & cover the handi, set it on high flame & let it preheat for 10-15 minutes at least.
Layering & baking of lasagna:
· Red sauce (very thin layer)
· Lasagna sheets
· Red sauce
· Sauteed veggies
· White sauce
· Mozzarella cheese
· Parmesan cheese
· Lasagna sheets
· Repeat the same layering process 4-5 times or until your baking tray fills, you should at least have 4-6 layers.
· Bake for 30-45 minutes in the makeshift oven. (30-35 minutes at 180 C in an oven)

Ingredients:
½ cup marinara sauce
¼ cup ricotta cheese, drained
1 cup carrots, shredded
1 cup zucchini, shredded
4 lasagna pasta sheets, cooked & cooled
1 garlic clove, minced
2 tbsp olive oil
2 oz cheddar cheese, grated
Salt & ground black pepper to taste
To Serve:
¼ tsp parsley chopped
1 tsp parmesan cheese, grated or powdered
⬇️ How to make Microwave Vegetable Lasagna ⬇️
0:10 Heat up oil in a skillet over medium heat. Add carrots and zucchini.
0:17 Saute until vegetables start to turn golden and water has been evaporated for roughly 8 to 10 minutes.
0:37 Add the garlic once your vegetables have stopped sweating and continue sauteing.
0:44 Adjust seasoning to taste with salt and pepper. Set aside.
0:53 In a microwave-safe container spread roughly 1 tbsp marinara sauce at the bottom, then place 1 lasagna sheet on top.
0:58 Add roughly 2 tbsps sauteed vegetables, followed by roughly 2 tbsps cheese. Repeat until you have roughly 4 layers total of pasta, sauteed vegetables, and cheese.
1:39 Heat in the microwave on a medium-high setting for 3½ - 4 minutes or until fully cooked, depending on the capabilities of the microwave being used.
1:46 Garnish with parsley and parmesan cheese and serve.

Lasagna is one of the oldest types of pasta. The word also refers to a dish made with several layers of lasagna sheets alternated with sauces and various other ingredients. Learn to make this Italian recipe easily at home.
Ingredient:
For the Filling:
1 tbsp Butter
1 small Onion - chopped
1 tsp Garlic Paste
1/2 red and green bell pepper
Zucchini & Mushroom
Parboiled Baby Corn, Carrot, Yellow Corn & French Beans
1 cup Spinach - chopped
Few Basil Leaves
1 & 1/2 cup Tomato Puree
2tsp Red Chilli Powder
1 tsp Sugar
Salt
For the White Sauce:
1 & 1/2 cup Milk
1 tbsp Cornflour
Salt
Oregano
1 tbsp Butter
Crushed Black Pepper
For Pasta Layer:
3 Pasta Sheets
OIl
Salt
Cheese (Soft Cheddar and Mozzarella)
Method:
- Add butter to a heated pan and add onions and garlic paste and saute them for a minute
- Add the bell peppers, zucchini, mushroom and stir fry
- Add rest of the parboiled Vegetables and saute it.
- Add the chopped spinach, basil leaves and cook it
- Once the spinach is soft and cooked, add the tomato puree.
- Add red chilli powder, sugar, salt and mix everything well and remove it from flame till it dries out.
- In a pan mix milk, cornflour, salt oregano, butter, black pepper and turn on the flame
- Stir continuously till it becomes thick
- In a separate pan boil water, add salt and oil to it and put the pasta sheets in it and boil them for approx 30 secs on both sides.
- On a dry napkin, spread the sheet to remove extra moisture
- Take a greased baking tray and place a pasta sheet
- Spread the vegetable filling on the sheet and spread some cheese on it
- Place another sheet and spread the vegetable filling on the sheet and spread some cheese on it
- Place third layer of sheet and spread the vegetable filling on the sheet and spread some cheese on it
- Place another layer of sheet and pour the white sauce on it with a special care that the sauce go down.
- Bake the lasagna in a pre heated oven at 180 c for 10 mins and remove it out and sprinkle some more cheese and cook it for another 15 mins.

Easy Vegetarian Lasagna Recipe
Easy Vegetarian Lasagna.
Simple, easy no hassle recipe.
Ingredients:
1 - 16oz package lasagna noodles
2 cups shredded mozzarella cheese
1 cup shredded cheddar cheese
1 large handful fresh spinach
3 small sweet peppers
1 small sliced zucchini
3 cups pasta sauce with basil and garlic
1/2 chopped onion
1 or 2 large mushroom
1 cup ricotta cheese
1/2 cup shredded Parmesan cheese

Saute the vegetables.
Add the sauce
simmer 15 minutes
Cook the noodles Al Dente.
Layer the noodles, ricotta, sauce and cheese in a 8x11 glass baking pan.
Cover and bake for 1/2 hour at 350 degrees.
Uncover and cook for additional 15 minutes to crust the top.
