This is my favourite chocolate chip cookie recipe! At times, its tough to come up with something innovative for our everyday Tea Time munching. I brings you this simple to assemble and easy to make chocochip caramel cookies for your tea time. So enjoy your tea time with your family with these delicious cookies & let us know how it turned out!
These cookies are best eaten fresh and warm but they stay good for a couple of days after baking in an airtight container.
Caramel sauce recipe :-
INGREDIENTS:-
- 1 Cup butter
- 1/2 Cup Powdered/caster sugar
- 1/2 cup brown sugar
- 2&1/4 Cup maida
- 1 Tsp baking soda
- 1/4 cup chilled milk
- 1 Tsp Vanilla essence
- 1/3 Cup choco chips
-1/4 caramel sauce

No Bake Mocha Java Salted Caramel Cookie Bites
COOKIES:
1 scoop Mocha Java Chip protein
1 stick Sweet Caramel FlexFlavors® (optional)
½ C old fashioned oats, ground
1 tsp pure vanilla
1 stickpack instant coffee or espresso
4 TBSP nut butter of your choice
¼ C pure maple syrup or honey
OPTIONAL TOPPINGS:
Sugar-free salted caramel chocolate chips
Sugar-free dark chocolate chips
Sea Salt
Mix dry ingredients well. Add wet to dry and mix until well combined. Scoop out dough and form into 1 balls. You can stop here and enjoy these as protein bites or keep going to make the cookies.
Press the balls flat and form into a small cookie shape. Add optional toppings. Place on a parchment paper-lined tray.
Cover cookies tightly and store in the fridge or freezer. I put them in a small airtight bags in the freezer and transfer a bag at a time to the fridge to enjoy.
Recipe yields approximately 10 bites/cookies.

Recipe for 15 mini tarts:
Shortcrust:
45g Soft butter | 3 + 1/4 tbsp
35g Sugar | 2 + 3/4 tbsp
1 tsp Vanilla extract or vanilla-infused sugar
1 Egg yolk
60g All-purpose flour | 1/3 cup
20g Ground almonds | 1/4 cup
* Alternatively you can use 60g All-purpose flour without nuts |1/2 cup)
1tsp Baking Powder
A pinch of salt
Caramel: (This recipe makes more than you'd need for the recipe, you can divide it or save the rest to use for other recipes)
100g Sugar | 1/2 cup
120ml Heavy cream | 1/2 cup
50g Butter | 3 + 1/2 tbsp
100g Dark chocolate ( or a mixture of dark and milk chocolate)
Nuts of choice
I used the mould from Silikomart Ref: SF027 (Amazon link):
*Alternatively you can use mini cupcakes moulds

About Cookies

About Caramel
Caramel is an orange-brown confectionery product made by heating a range of sugars. It can be used as a flavoring in puddings and desserts, as a filling in bonbons, cookies or as a topping for ice cream and custard.
The process of caramelization consists of heating sugar slowly to around 170 °C (340 °F). As the sugar heats, the molecules break down and re-form into compounds with a characteristic colour and flavour.
A variety of candies, desserts, toppings, and confections are made with caramel: brittles, nougats, pralines, flan, crème brûlée, crème caramel, and caramel apples. Ice creams sometimes are flavored with or contain swirls of caramel. |
