As if making deliciously irresistible Salted Caramels last week wasn't enough, I am so happy to give you this recipe for Chewy Caramel Cookies, so you can use up any Caramels you have left over!
Recipe -
350g plain flour
1/2 tsp salt
1 tsp bicarbonate of soda
230g soft unsalted butter
100g caster sugar
155g soft light brown sugar
45g demerara sugar
1 large free range egg
1 tsp vanilla
18 chewy salted caramels

About Cookies
A cookie is a baked or cooked snack or dessert that is typically small, flat and sweet. It usually contains flour, sugar, egg, and some type of oil, fat, or butter. It may include other ingredients such as raisins, oats, chocolate chips, nuts, etc.
Biscuit or cookie variants include sandwich biscuits, such as custard creams, Jammie Dodgers, Bourbons and Oreos, with marshmallow or jam filling and sometimes dipped in chocolate or another sweet coating. Cookies are often served with beverages such as milk, coffee or tea and sometimes dunked, an approach which releases more flavour from confections by dissolving the sugars, while also softening their texture.
About Caramel
Caramel is an orange-brown confectionery product made by heating a range of sugars. It can be used as a flavoring in puddings and desserts, as a filling in bonbons, cookies or as a topping for ice cream and custard.
The process of caramelization consists of heating sugar slowly to around 170 °C (340 °F). As the sugar heats, the molecules break down and re-form into compounds with a characteristic colour and flavour.
A variety of candies, desserts, toppings, and confections are made with caramel: brittles, nougats, pralines, flan, crème brûlée, crème caramel, and caramel apples. Ice creams sometimes are flavored with or contain swirls of caramel. |

Recipe for 15 mini tarts:
Shortcrust:
45g Soft butter | 3 + 1/4 tbsp
35g Sugar | 2 + 3/4 tbsp
1 tsp Vanilla extract or vanilla-infused sugar
1 Egg yolk
60g All-purpose flour | 1/3 cup
20g Ground almonds | 1/4 cup
* Alternatively you can use 60g All-purpose flour without nuts |1/2 cup)
1tsp Baking Powder
A pinch of salt
Caramel: (This recipe makes more than you'd need for the recipe, you can divide it or save the rest to use for other recipes)
100g Sugar | 1/2 cup
120ml Heavy cream | 1/2 cup
50g Butter | 3 + 1/2 tbsp
100g Dark chocolate ( or a mixture of dark and milk chocolate)
Nuts of choice
