How To make Turkey Scallopine
2 6 ounce Turkey Escalopes
1 Glass Sparkling Muscatel
-grape juice or vermouth 5 fl Double Cream
Salt and Pepper 1 tb Oil
1 tb Butter
Wrap the escalopes in clingfilm and flatten gently with the back of a heavy frying pan until they are really thin. Peel off the clingfilm. Heat the oil then the butter in a large frying pan. Put in the meat and press down firmly so it is all in contact with the frying pan. Let it sizzle for between one minute and a minute and a half, depending on how thin you've managed to flatten the escalopes, turn them over and repeat the timing. The meat will be thoroughly cooked through - you do not ever want pink turkey - but very tender. Put the meat on warmed plates. Pour the grape juice or vermouth into the frying pan, stir it round to pick up all the bits from the meat, then add the double cream and let it bubble (double cream boils beautifully) and reduce slightly. Pour it over the turkey and serve with pasta or new potatoes and mangetout. Source: Michael Barry, Yes! Magazine

Turkey Breast Fillet Paprikash in 30 minutes! || Paprikaš????✔????
I know you have one of those times when you just want to make a quick and easy lunch or dinner, not having to spend 2 hours in the kitchen.
Turkey paprikash is super easy to make with super simple ingredients.
Turkey Breast fillet
2 Garlic cloves
Half of a big onion
1 Carrot, sliced
Spices for turkey : salt, pepper, Italian seasoning and sweet paprika powder
Olive oil
Tablespoon of tomato paste
Hot water or chicken stock
A table spoon of heavy cream
Some parsley
Chop garlic and slice half an onion and also a carrot.
For turkey breast fillet - season with salt, pepper, Italian spices and sweet paprika powder. Rub them into the meat and drizzle some olive oil too.
Now, sear both sides of the meat into a pan with olive oil. Then place into a plate and saute the onion and garlic into the same pan. Add tomato paste and return the fillet with its sauce, pour hot water (or chicken stock), cover and cook for 15 minutes. Then, add the carrots and cook for another minutes and pour some heavy cream. Garnish with fresh parsley.
I serve this with a cooked couscous which is super easy to make as well. You can also make it with rice, mashed potato or some pasta.
