pinch of cinnamon
3 tbsp melted unsalted butter
Two 8 oz bars of cream cheese at room temp.
1 1/2 cup heavy whipping cream
3/4 cup of powdered sugar/confectioners sugar
14 oz bar of guava paste (at room temp)
1/4 cup milk

SHORTBREAD
Butter - 225g
Sugar - 125g
All Purpose Flour - 340g
PASSION FRUIT LAYER
Condensed Milk - 390g
Passion Fruit Juice - 1/2 Cup
Orange Juice - 3 Tbsp
SWISS MERINGUE
Egg Whites - 3 Large Eggs
Sugar - 125g
Pinch of Salt
Pinch of Cream of tartar

SPRING TROPICAL DESSERT BAR
SPRING TROPICAL DESSERT BAR
SPICED APPLE BERRY PIE:
FOR CRUST:
Flour 2 ½ cup
Salt ½ tsp
Cold water 6 tbsp
Unsalted butter 500 gram
Method
Mix Flour and salt in a mixer
Add butter (cut in cubes) into flour mixture
Add cold water and mix well
Divide the dough into two equal halves
Wrap separately in cling film and refrigerate (1 hr)
FOR APPLE SAUCE:
1 apple
Cinnamon ½ tsp
Unsalted butter 5 tbsp
Flour 1 tbsp
Water ¼ cup
Honey 3 tbsp
Method:
Melt butter in a pan
Add flour and cook it in butter till it changes to brown color
Add water
When mixture thickens, add honey
Mix well and remove from heat
FOR STRAWBERRY SAUCE:
Strawberries 1 cup
Lemon juice 1 tbsp
Lemon zest ½ tsp
Water ½ cup
METHOD
Defrost frozen strawberries
Mix all ingredients in a pan and cook well
When mixture thickens, blend it
And cook well
When it thickens completely, remove from heat
Roll out (first half) of the dough (refrigerated earlier) on a pie pan
Add Half and half strawberry and apple sauce
Roll out second half of dough and cut it into strips
Cover the pie pan with these dough strips
Bake at 180 C for 25 minutes
CHOCOLATE GELATO PEARL
4 large bananas (frozen and cut into slices)
Almonds ¼ cup (soaked in water and peeled)
Cocoa powder ¼ cup
Dates 10 (soaked in water and peeled)
Water ¼ cup
Vanilla extract ½ tsp
METHOD
Blend vanilla, almonds and water in a blender
Almond milk is ready
This is a secret ingredient which will make the ice cream very creamy
Add cocoa powder, dates and mix well
Add frozen bananas and blend well
Scrap mixture from sides of blender and continue to blend 3-4 times
When mixture is smooth, place in air tight container
And freeze overnight, icecream is ready
LEMON DROP CAKE
Eggs 3
Lemon juice 1 tbsp
Vanilla extract ½ tsp
Lemon zest ½ tsp
Salt ½ tsp
Oil ¼ cup
Honey 1 cup
Almond flour ¼ cup
All purpose flour 1 cup
Baking powder 1 ½ tsp
Milk 1/3 cup
METHOD
Mix eggs, vanilla and salt well in a bowl till mixture becomes frothy
Add honey and mix
Strain almond flour and add to mixture
Add flour and baking powder as well
Mix well with a spatula
Place butter paper in a pan and add batter to the pan
Bake at 350 F for 55 minutes
FRUIT AND NUT TRIFLE
Cake slices (recipe mentioned earlier)
Cream ½ cup
Fruit cocktail 2 tbsp
FOR APRICOT SAUCE
8 apricots
2 cups water
Honey 2 tbsp
Salt a pinch
Oil ½ tsp
Walnuts 2
METHOD
Boil apricots in water till they become soft
Remove from heat
Blend softened apricots in a blender
Heat oil in a pan
Add apricot paste in hot oil
Cook in oil for 1-2 minutes
Add walnuts, salt and honey to this mixture
Mix well and remove from heat
FIG SAUCE
6-7 figs
Oil ½ tsp
Water 2 cups
Honey 2 tbsp
METHOD
Boil figs in water until they become softened and turn into paste like texture
Heat oil in pan and add fig mixture
Cook well
Add honey and mix well
Remove from heat
FOR STRAWBERRY SAUCE:
Strawberries 1 cup
Lemon juice 1 tbsp
Lemon zest ½ tsp
Water ½ cup
METHOD
Defrost frozen strawberries
Mix all ingredients in a pan and cook well
When mixture thickens, blend it
And cook well
When it thickens completely, remove from heat
Assemble all elements of trifle (as shown in video)
Tropical Coconut Bars: Get Ready To Dance
Tropical Coconut Bars
Relax with these incredible and easy to make coconut bars. If you want to make the crust thinner, omit 1/2 c.(60g) flour.

My 9x13 pan
Crust
Ingredients:
1 c. (227g) unsalted butter at room temperature and cubed
3/4 c. (150g) sugar
1 tsp vanilla extract
3 c. (360g) flour
dash of kosher salt
1. Preheat oven to 375°. Line the bottom of a 9x13 pan with parchment paper. Spray some baking spray in the corners and roughly around to help the paper stay in place.
2. In the bowl of a food processor, mix butter and sugar until it's light and fluffy. Add in the vanilla extract and flour, and mix until it looks like parmesan cheese.
3. Bake for 25 minutes, then turn your oven to 350° for the filling.
Filling
Ingredients:
5 egg whites
1 c (200g) sugar
1 1/2 c. (173g) powdered sugar
2 tsp vanilla extract
zest of 3 small limes
1 tsp cinnamon
1/2 tsp cardamon
2 c. coconut (plus about 1 1/2 c to sprinkle on top)
1/2 tsp kosher salt
Directions:
1. Whisk the egg whites on medium speed until they're foamy all the way to the bottom of the bowl. Whisk in the kosher salt.
2. Gradually add in the sugar and then the powdered sugar. Whisk in the vanilla extract.
3. Fold in lime zest, cardamon and cinnamon.
4. Spread onto crust and sprinkle with coconut. Bake for 25-30 minutes. Top will turn a toasty brown and center will be at least 160°.
5. Cool in pan 15 minutes before removing.
