TRIPE
3 pounds tripe
¼ cup white vinegar
2 bay leaves
3-4 tablespoons olive oil
2-3 cloves garlic, minced
1 cup onion, chopped
1 cup carrots, chopped
1 cup celery, chopped
3 medium potatoes, cubed
2 quarts peeled tomatoes
1 quart water
3 pickled hot peppers, as desired
½ cup Pecorino Romano Cheese, grated
Salt & Black Pepper to taste

Who is this lady?
Gina Petitti was born in 1935 in Faeto, Italy. It is in the province of Foggia in the Puglia region of southeast Italy. Her family ran a farm in Italy and she met her husband, Vito, in the same town. In 1970 Gina, Vito, and her 4 children immigrated to America. Gina’s husband passed away in 2012, but she is surrounded by a large family, which includes 9 grandchildren, and lives 5 minutes away from her eldest daughter in New Jersey. Gina enjoys making food for her family in the same old fashion ways as she was taught by her mother and grandmother in Italy, and also new things she has subsequently learned from family and friends in America. She also enjoys gardening, and being an active member of her local Church.
Where does Gina get her recipes?
Most of these recipes are from what she learned growing up in Italy, but some of them have evolved over time. She has also learned new recipes from friends and family in America. She is always eager to try new things.
Why is no one helping her in the video?
Grandma Gina doesn’t want help! Usually, it’s because we will slow her down or not do it “her way.” For the videos we only show her, but when the camera cuts we jump in and help form the cookies or prep for the next step.
Why don’t we buy her a new...?
Grandma Gina has a closet and garage full of new gadgets, spoons, forks, pots, etc… but she doesn’t like them because she is used to doing it with her old tools. She has fun getting her hands dirty!
Who is behind the camera and behind the scenes?
Grandma Gina’s retired son-in-law, Nick, does the filming, editing, production, and channel management. Her daughter, Maria, helps with food preparation, kitchen setup and fan support. Also, Grandma Gina usually has one or two grand-kids in the kitchen to help.
Does Gina read the comments?
We print out and show her how much love she gets from all her viewers, and she is very thankful and hopes you enjoy her cooking! Your comments bring her lots of joy, laughter, and inspiration to make more videos to share with you.

Cook Florence Style Tripe
Tripe is not often used in modern culinary, but it's been enjoyed for thousands of years and this recipe is a great way to enjoy the dish as they did for so many years.
This is Tripe the way they would eat it in Florence throughout history.
To prepare the Tripe, you'll want to:
1. Bring to a boil in a pot with 1/2 cup white vinegar and a Tbs of Salt.
2. Once it's boiling, bring it to a gentle simmer for 1.5 hours
3. When it's done, let it cool and cut into 1 inch pieces and begin the recipe.
It's very simple and would make a great side dish, or appetizer for those who are willing to try. Serve piping hot and with some bread for best results.

Hi everyone , I'm Sonia and welcome to the GialloZafferano kitchen. Today we'll be making a unique dish that's part of traditional Roman cuisine: Tripe alla Romana. Let's see what we'll need.
2 and a quarter pounds of tripe cleaned and sliced.
2 and a half cups of crushed tomatoes
Pepper, salt
Spearmint
Half a cup of grated pecorino cheese
5 tablespoons of extra virgin olive oil
1 cup of white wine
A stalk of celery, a carrot and an onion
Let's make it.
First, put the 5 tbsp of oil into a pot and add to that a fine mince of the onion, carrot and celery. Leave it to just soften and then add the tripe. Mix it and let it cook until the tripe is completely dry, and then add the wine to cook off.
Now, let the wine completely evaporate.
Now that the tripe is cooked dry, add the crushed tomatoes. Salt the tripe, then add pepper, and let it cook until the tripe is tender. If too much liquid cooks off, just add a bit of broth to keep it moist.
Now that the tripe is tender and the moisture has cooked off, turn off the head and add the grated cheese, the chopped mint -- just a couple tablespoons of chopped fresh leaves. Mix together well, and then serve.

Here’s all the Italian food we ate in Florence:
All’Antico Vinaio, Florence, Italy ( - We’re starting off this Italian street food tour with what is easily one of the world’s most famous sandwiches from All’Antico Vinaio. Their bread is immaculate, right out of the oven. I tried three different sandwiches, all of which were outstanding:
Sandwich 1: Favolosa - Sbriciolona salami, cream of pecorino cheese, artichokes, spicy eggplants
Sandwich 2: La Inferno - Roast suckling pig, spicy cream, spicy eggplant, rocket
Sandwich 3: La Paradiso - Mortadella, stracciatella cheese, pistachios
Tripperia Pollini Lampredotto - You can visit Florence without trying their beloved lampredetto, a sandwich made with the cow’s 4th stomach (abomasum). Traditionally it’s just served with salt and pepper, but with some herb oil and chili oil it really bumps up the flavor.
Vivoli Gelato - Continuing with this Italian food tour with had a Gran Crema Caffè Vivoli (Affogato) - Cream gelato with coffee, at one of the original and historical gelato shops - it was delicious!
Tripe sandwich: Da' Vinattieri - Edoardo next brought us into an alley to eat Trippa alla Fiorentina - Florence style tripe sandwich, which is slightly different from the lampredetto we had already eaten earlier.
La Sorbettiera - After trying the original and old style gelato affogato, we then needed to try a modern gelato spot.
Cibrèo Ristorante, Florence, Italy ( - Finally, along with all the street food, we decided to sit down for a massive higher end dinner to highlight some of the true and nearly forgotten Italian dishes of Florence. We tried the massive Antipasto, Collo di pollo ripieno - stuffed chicken neck, Tagliolini cacio e burro - pasta with cheese and butter, Roastbeef del Cibrèo Caffè - roast beef with butter sauce, and finally Cibrèo - chicken and rooster organs in egg and lemon sauce! What a meal, highly recommended and thank you again for Edoardo for arranging it.
