1 c Mayonnaise 2 c Tortellini, cooked 1/4 c Parmesan cheese 1 c Julienne zucchini 1/4 c Chopped parsley 1 c Julienne carrots 2 Minced garlic cloves 1 c Cherry tomato halves 1 1/2 ts Crushed basil leaves 1/2 c Chopped walnuts 2 tb Milk Combine first six ingredients. Add remaining ingredients except walnuts. Chill. Add walnuts before serving. Makes 4 servings.

This quick dinner for two comes together so quickly, and is perfect for your next date night in. A great way to use up zucchini from the garden and cherry tomatoes, too!

6 ounces fresh cheese tortellini
2 tablespoons olive oil
1 small zucchini, sliced into half moons
pinch of red pepper flakes
1 cup cherry tomatoes
1/3 cup store-bought pesto
3 tablespoons grated Parmesan cheese, plus extra for serving
fresh basil leaves, for serving -- 1. Bring a large pot of salted water to a boil.
2. Add the tortellini to the boiling water, and cook according to the package directions. (They usually cook in less than 5 minutes).
3. Meanwhile, heat the olive oil in a large skillet.
4. Add the sliced zucchini to the skillet, and let the first side brown a bit in the oil.
5. Add the red pepper flakes and cherry tomatoes to the zucchini in the skillet. Cook until the tomatoes start to wilt and release their juices.
6. Drain the pasta and add it to the pan with the vegetables, and toss to coat.
7. Move the mixture to a serving bowl, and stir in the pesto and Parmesan cheese. Serve with extra Parmesan cheese and fresh basil leaves.

Ingredients 1 box farfalle pasta (bow tie) 1/2 cup basil pesto 1 1/2 cups pearl mozzarella 32 cherry tomatoes or 12 oz
Instructions:
1. Bring a pot of water to a boil then generously salt the water and add the Farfalle pasta to the pot. Cook al dente.
2. Once the pasta is done cooking, pour it into a colander and rinse with cold water to stop the pasta from cooking.
3. Now place the pasta into a large bowl and stir in the pesto, pearl mozzarella, and sliced cherry tomatoes. Serve chilled.
