How To make Toll House Layercake
CAKE:
1 c Butter, softened
1 c Brown sugar, firmly packed
2/3 c Sugar
2 ts Vanilla
1/2 ts Salt
4 Eggs
2 c Flour, all-purpose
1 pk Chocolate chips, "Little
-Bits" semi-sweet, -divided 12oz pack FROSTING:
3/4 c Butter, softened
1 1/2 c Sifted confectioners' sugar
2 ts Vanilla
Cake: Preheat oven to 350~F. Grease 15 1/2 x 10 1/2 x 1" baking pan. Line with waxed paper. In bowl, cream butter, brown sugar, sugar, vanilla and salt. Add eggs, one at a time, beating well after each addition. Gradually add flour. Stir in 1 cup chocolate bits. Spread in prepared pan. bake 20-25 minutes. Cool completely. Loosen sides of cake. Invert onto floured cloth. Peel off waxed paper. Cut cake crosswise into 4 3-3/4x10" sections. Spread 3 slightly rounded tablespoons frosting on one layer. Top with second layer. Repeat layers. Frost with remaining frosting. Frosting: Melt over hot (not boiling) water, 1 cup semi-sweet chocolate bits, stir until smooth. Set aside. In bowl, cream butter and confectioners' sugar. Add melted chocolate and vanilla; blend until smooth. Makes 1-10" cake.

Okay I am SO EXCITED for this one! This red velvet cake is so incredibly soft, full of flavour and is topped with the most delicious cream cheese buttercream. I couldn't think of a better match!
This is an updated version of my original red velvet cake recipe. I tweaked it slightly and came up with this version which I am IN LOVE WITH! I hope you all love it just as much :)
HOMEMADE CAKE RELEASE:
CREAM CHEESE BUTTERCREAM:
INGREDIENTS:
2¼ cups (275 g) flour - regular all purpose (see note 3 on blog post if you want to use cake flour)
3 tbsp (18 g) cornflour - also known as cornstarch
3 tbsp (14 g) cocoa powder - unsweetened
½ tsp baking soda
1 tsp baking powder
½ tsp salt - omit if using salted butter
6 tbsp (86 g) unsalted butter - room temperature
¾ cup (141 g) unflavoured vegetable oil - I use canola
1¾ cups (344 g) white granulated sugar
3 large eggs - room temperature
1 tbsp (12 g) vanilla essence/extract
1½ tsp white vinegar
3½ tbsp (38 g) red liquid food colouring
¾ cup (158 g) buttermilk - room temperature
Bake at 160 °C (320°F) with the fan on. If your oven doesn't have a fan option, then you will need to increase the baking temperature to 175°C (347°F).

Red Velvet Cake Recipe
Red Velvet Cake - soft and moist interior with a great flavor combination coming from vanilla, cocoa powder and buttermilk. This cake has a wonderful red color crumb and frosted with a white cream cheese frosting which makes it perfect for winter holidays.

Ingredients
Makes about 10-12 servings
Cake Batter
2 2/3 cups (310g) cake flour
2 tbsp (16g) unsweetened cocoa powder
1 tsp (5g) baking soda
1 tsp (5g) salt
1/2 cup (113g) unsalted butter, room temperature
1 1/2 cup (300g) sugar
2 eggs
1 cup (220g) vegetable oil
1 tsp (5ml) white vinegar
2 tsp (10g) vanilla extract
1 cup (240g) buttermilk, room temperature
1- 2 oz (30g) red food coloring gel
Cream Cheese Frosting
17 oz (500g) cream cheese, room temperature
1 1/3 cup (300g) heavy whipping cream, chilled
1 tsp (5g) vanilla extract
1 1/4 cup (156g) powdered sugar
1. Preheat oven to 350F (180C). Grease with butter and dust with flour two 9 inch (23 cm) round cake pans.
2. In a large bowl sift together the flour, cocoa powder, baking soda and salt and whisk to combine.
3. In another bowl mix butter with sugar until combined. Incorporate eggs one at a time. Mix in oil, vinegar,vanilla extract and buttermilk. Incorporate flour mixture until well combined.
4. Gradually add red food coloring until the desired color is reached.
5. Pour the batter evenly into the prepared pans.
6. Bake for about 30 minutes until a toothpick inserted into the center comes out clean.
7. Let pans cool on a cooling rack for 10 minutes.
8. Remove the cakes from the pan and let them cool completely.
9. Prepare the frosting. In a bowl sift the powdered sugar. Beat the cream cheese with powdered sugar and vanilla extract until smooth.
10. In another bowl whip the cream until stiff peaks form. Gradually fold into the cream cheese mixture until well combined.
11. Assemble the cake. Cut the tops of the cakes to create flat surfaces. Make crumbs out of the left pieces of cake and set aside.
12. Place 1 cake layer on your serving plate. Spread evenly with a bit less than half of frosting. Add the second layer of cake. Gradually spread the remaining frosting on top and sides of the cake.
13. Decorate the cake with remained cake crumbs if desired. The cake is ready to serve.
14. The leftover frosted cake can be covered and refrigerated for up to a week. Serve at room temperature.

- 110 gr Softened Butter
- 40 gr Coconut Oil
- 160 gr Sugar
- 2 tbsp Vanilla Extract
- 3 Eggs
- 270 gr All Purpose Flour
- 3 tsp Baking Powder
- 120 gr unsweetened full fat yogurt
- 60 gr Milk
- 1/2 tsp Salt
- Food Coloring
Ingredients for the Blue Drip:
- 100 gr melted White Chocolate
- 40 gr Heavy Cream
- Blue Food Coloring

ONE MINUTE CHOCOLATE FROSTING RECIPE
Ingredients
2 Tbsp / 30g Butter
1 Cup / 125g Powdered Sugar / Icing Sugar
2 Tbsp / 12g Cocoa Powder
1/2 tsp Salt
1-2 Tbsp Hot Water
Instructions
Bring some water to the boil in kettle or in a small saucepan over high heat. Once it is boiling set aside.
In a medium sized mixing bowl add the butter, powdered sugar, cocoa powder and salt.
Pour over the hot water and use a whisk to combine the ingredients together until whipped and smooth.
Add more water if needed for a thinner consistency.
Notes
Use the Chocolate Frosting immediately as it will start to thicken as it sits.
More hot water can be added to thin out the consistency if it has set.
The recipe can easily be doubled or tripped to make a larger amount.

Giant Cookie Cake! The Absolute Best!
This Giant Cookie Cake is the absolute best you will find! Seriously better than those in the mall. I have used this recipe for years to make Chocolate Chip Cookies but I was beyond excited that it worked amazing for a giant cookie also. The cookie cake is so soft and chewy and holds together beautifully when sliced. I hope you give it a try!
Chocolate Chip Cookie Dough
This can be used for regular cookies or one giant cookie cake.
Ingredients
3/4 cup butter flavored shortening
3/4 cup brown sugar
3/4 cup of white sugar
2 eggs
2 tbsp water
1 tbsp vanilla extract
1/2 tsp salt
1 tsp baking soda
1 tsp baking powder
2 3/4 cup flour
1 12oz bag of chocolate chips
Instructions
1. Mix together shortening and sugars until creamy.
2. Add eggs one at a time and mix well after each egg.
3. Add water and vanilla extract.
4. Add salt, baking soda, baking powder, flour, and mix until everything is well combined.
5. Add chocolate chips and mix until they are well distributed.
6. Spread dough on to a greased 16 inch pizza pan, pressing until the dough reaches the edge of the pan, leaving space for dough to expand in the oven.
7. Bake in a 350 degree oven for anywhere from 15 to 20 minutes. Mine baked for 16 minutes.
8. Cool completely then decorate however you desire.
9. Slice, eat, and enjoy!
