Moon Fan Fried Rice is a quick lunch box recipe. It is very different from the usual fried rice and is cooked in an interesting method, let’s see how to make it.
Prep time - 20 mins
Cooking Time - 30 mins
Number of servings - 4 persons
Ingredients
Basmati Rice - 1 Cup (250 Ml)
Sesame Oil - 1 1/2 Tbsp
Chopped Garlic - 1 Tsp
Onion - 1 No. Thinly Sliced
Carrot - 1 No.
Cabbage - 1 Cup
Mushroom - 200 Gms
Salt - 1 Tsp
Pepper
Spring Onion
Oyster Sauce - 2 Tbsp
Soy Sauce - 1 Tbsp
Water
Bamboo Steamer
Cabbage Leaves
Garlic Fried Rice & Mushroom Gravy recipe -

Method
1. Cook the rice about 3/4th done and keep aside
2. Heat oil in a wok, toss in onions, garlic, carrots, cabbage and mushrooms, spring onions and saute
3. Add oyster sauce, dark soy sauce, spring onions, and mix
4. Add rice and toss well
5. Now take a bamboo steamer or any vessel and lay it with cabbage leaves, layer it with the fried rice and layer it again with cabbage leaves. Close the steamer/ vessel tightly and steam it for 10 minutes
6. Serve hot
Chili Tofu Gravy
Prep time - 10 mins
Cooking Time - 20 mins
Number of servings - 4 persons
Ingredients
Tofu - 200 Gms
Sesame Oil - 2 Tsp
Chopped Garlic - 1 Tsp
Chopped Ginger - 1 Tsp
Onion - 1 No.
Capsicum - 1/2 No.
Soy Sauce - 1 Tbsp
Red Chili Sauce - 2 Tbsp
Tomato Ketchup - 1 Tbsp
Vinegar - 1 Tsp
Red Chili Flakes - 1 Tsp
Water - 1/2 Cup
Corn Flour - 1 Tsp
Water
Spring Onion Greens
Method
1. Firstly, marinate the tofu pieces with red chili sauce, soy sauce, salt, and pepper
2. Marinate it for about 10 minutes
3. Once the tofu pieces are marinated, pan fry the pieces till they are golden brown in color and keep them aside
4. Heat a pan with some oil, saute ginger, garlic, onion, capsicum and spring onions
5. Add the sauces and mix well
6. Mix the cornflour in some water to make a cornflour slurry and add it to the pan
7. Add the fried tofu pieces and bring the gravy to a boil
8. Garnish it with chopped spring onion greens and serve it hot

5 MINUTE GARLIC CHILI OIL
This recipe is for a 5 minute Chinese Chili Oil. It's a tasty and spicy homemade chili oil made with red chili flakes, gochugaru, garlic and other ingredients. You can easily make it at home! The process is super quick. All you need to do is heat the oil and then pour it over crushed red pepper flakes. Let it cool, and you're done!
This chili oil is not only delicious, but it also makes a great dipping sauce for rice, noodles, vegetable, dumplings and potstickers.
Recipe:
1/2 cup chili flakes
1/2 cup gochugaru
2 tbsp sesame seed
1/2 tsp salt
1 1/2 tbsp sugar
3 tbsp garlic minced
1 tbsp ginger minced
2 cup oil
Method:
1.) In a small saucepan, heat the vegetable oil over medium heat until it reaches about 2-3 minutes. Be careful not to let it smoke or burn.
2.) While the oil is heating, prepare a heatproof container to hold the chili oil.
Combine all the ingredients except for the soy sauce.
3.) Once the oil is hot, carefully pour it over the chili mixture in the heatproof container.
4.) Then add in the soy sauce, stir the mixture gently with a spoon to ensure all the ingredients are evenly coated with the oil.
5.) Allow the chili oil to cool completely at room temperature. As it cools, the flavors will infuse into the oil, creating a rich and spicy condiment.

Ginger Scallion & Garlic Chili Oil
Looking for tasty, spicy condiment to jazz up your dishes? This chili oil use only a few ingredients to make and it is a great addition to your dishes! It is perfect for drizzling over toast, noodles, dumplings, sautéing vegetables and much more!
40g chili flakes
3 stalk scallions, chopped
8 garlic cloves, sliced
15g ginger, grated
Seasoning:
2 tbsp sugar
2 tbsp soy sauce
1/4 tsp salt
1 tbsp sesame seeds
140ml vegetable oil
Method:
1.) Heat the oil in saucepan on medium heat.
2.) Add in the ginger cook for 30 seconds to release the fragrant.
3.) Add in the garlic, scallions and the seasoning.
4.) Let the oil cool before jarring. Seal tight and store in the refrigerator for up to 2 weeks.
5.) To allow the chili oil to room temperature, leave the bottle out at room temperature before using it.
