How To make The Bicol Express

garlic, chopped

onions, chopped

ginger, fresh, chopped

dilao (tumeric), fresh

kg
cooked pork sliced into 1/2 inch strips
1 1/2
tablespoon
hot chilli (siling labuyo, chopped)
1 1/2
cup
bagoong alamang
6
cup
coconut cream
2
cup
hot green peppers, fresh (elongated variety), sliced diagonally into 1/4 inch strips
1 1/2
cup
red peppers, fresh (elongated variety), sliced diagonally into 1/4 inch strips
Directions:
Saute garlic in hot oil. Add onions and cook until translucent. Stir in fresh ginger, dilao, and the sliced cooked pork. Stir continually for 5 minutes. Add bagoong alamang and chopped hot chilli (siling labuyo). Stir until the pork is completely covered by the mixture. (about 15 minutes.) Pour in 6 cups of coconut cream and add the sliced hot green and red peppers. Continue cooking for about 20 minutes. Add salt if necessary.
Note: chillis and peppers to be added according to spiciness desired.

1 can coconut cream
1 can coconut milk
1 cup water

How to cook bicol express | The original Bicol recipe
Bicol express
Ingredients:
Pork 1 kilo (kasim,sliced)
Shrimp paste 3 tbsp
Onion 2 pcs (sliced)
Garlic 5 cloves (minced)
Green chili 5 pcs (sliced)
Red hot chili 2 pcs (chopped)
Coconut cream 2 cups
Water 1 1/2 cup or much better if you have coconut milk
Salt and pepper to taste
Seasoning or msg (optional)
Procedure:
* Cut the pork into cubes then wash with clean water and drain
* Preheat a pan at high flame setting, saute onions, garlic pork then add shrimp paste and cover for 10 mins to render the fats.
* Add water or coconut milk then simmer until the meat is tender.
* Add coconut cream green chili and season with salt and pepper and also add your preferred seasoning to enhance the taste.
*Continue to cook and mix until the coconut cream becomes translucent.
* Serve with rice
