4 lb Sirloin boneless roast
2 lb Venison boneless
2 c Lone Star beer
1/2 c Coca-Cola (not diet)
4 ea Med. onions chopped coarse
5 ea Garlic cloves minced
2 c Tomato sauce
1 c Sour mash whiskey
1 c Green Bell pepper chopped
1 c Red Bell pepper chopped
6 ea Ancho peppers dried
- & chopped 6 ea Green Jalapenos peppers
- seeded & diced 2 ts Salt
2 tb Tabasco sauce
1 1/2 c Tomato paste
1 tb Cayenne flakes
1 ts All Spice
4 tb Cumin fresh ground
2 tb Cilantro fresh chopped
2 tb Peanut oil
Cut meat into 1/4" cubes. Put peanut oil into a large, cast iron pot, heat on Med. High, add onions, garlic, meat cubes, and 1 T of cumin. Cook until meat is browned. Add tomato sauce, beer, whiskey, Coca-Cola, peppers, spices <hold out 1 T cumin>, and cook on Low Heat for 45 minutes, covered, stirring often. Uncover and cook for 20 minutes more. THINGS YOU’LL NEED:
2 pounds tomatillos husked and rinsed
2 poblano peppers stemmed and sliced in half lengthwise
3-4 jalapeno peppers stemmed and sliced in half lengthwise
FOR THE CHILI
2 tablespoons olive oil
3 pound boneless pork shoulder cubed (do bite-sized cubes)
2 tablespoons ancho chili powder optional
1 teaspoon cumin optional
Salt and pepper to taste
1 large onion chopped (white or yellow)
4 cloves garlic chopped
1 tablespoon Mexican oregano
½ to 1 cup chicken stock
½ cup chopped cilantro
Juice from 1 large lime
FOR SERVING
Extra limes, sliced jalapeno peppers, fresh chopped cilantro, crumbly white cheese, spicy chili flakes

Chili - feat. Binging with Babish (You Suck at Cooking, episode 101)
Chili. It's delicious. Especially when you learn to make this simple recipe yourself. Or when you manipulate a friend to make beef chili for you. Also, beans. Who knew some people feel so strongly about beans in beef chili. I did. I feel strongly that I like chili with or without beans.

Alright to make this chili do something like this:
Brown around two pounds of beef by putting your skillet on medium high with a teaspoon of oil which you may not need if you beef is more fatty. Break it up in the pan then let it sit until a crust starts to form, then flip and do the same thing again
Dice a large onion and chop it up
Do the same with three cloves of garlic
Heat your chili pot on medium with some olive oil then sauté the onion until it starts to brown
Throw the garlic in during the last couple of minutes
Then add the beef with a teaspoon of salt and break it up more
Add in 28oz/790g crushed tomatoes
2 tablespoon chili powder
1 tablespoon cumin
1 to 1.5 cups beef broth…adjust as necessary
½ tablespoon of brown sugar
15.5oz/439g chatty bastard kidney beans
Then add hot sauce or more spice as desired.
Then add toppings, which don’t count as chili ingredients, because they are on top, not inside. They’re not really a part of the chili. The chili is it’s own thing. It’s like calling ketchup a hot dog. Ketchup isn’t a hot dog. It’s ketchup. It has it’s own life. Don’t argue with me here. It will get you nowhere and it will just waste both of our times. Especially if you’re right.

200-300g of Ground Beef
1 tablespoon of Oil
Salt & Pepper to season
1 Onion, diced
2 cloves of Garlic, crushed
Salt
2 Hot Red Chilies
1 tablespoon of Oil
1 can of Chopped Tomatoes
1 teaspoon of Sugar
Pepper
1 cup / 250mls of Beef Stock
1 can of Kidney Beans
1 Yellow Capsicum, diced
Coriander or a herb of choice
Serve with Rice
Gently simmer for 30 minutes

Oooh!! This PERFECT 5 STAR HOMEADE CHILI is just what's perfect this time of year or anytime, it is easy, hearty and delicious. I grind my Chuck Roast to a chunky grind and prepare it for the perfect chili. This is one dish that is sure to happen in our home. I love preparing a big pot of this chili with beans and serving it to family or friends, and having a wonderful time. I have played around with different spices and seasonings throughout the years until I got it just right then I've stuck with it ever since (there is no need to change anything) it is Chili at it's best. I like to serve the heat separately since I never know who will want heat or not, and I love topping it with Pco de gallo, freshly grated Colby jack cheese and cold sour cream, then I crumble big chunks of cornbread on the side, making it the perfect dish. This Chili will always be a hit in your home. ❤

3 Lbs. Chuck Roast (ground chunky)
4-5 Tbsp bacon grease (divided)
1 medium/large onion (chopped)
1 large green Bell pepper (chopped)
1 large yellow Bell pepper (chopped)
2 Lbs. diced fresh tomatoes (or 2 16 oz.cans)
1 Tbsp freshly ground cumin (or store bought)
4 large garlic cloves (ground in molcajete) or minced
1/2 C. water for molcajete
3 Tbsp ancho chili powder (or your choice)
3 Tbsp Gebhardts chili powder (or your choice)
1 Tbsp smoked paprika
2 Tbsp garlic powder
1 Tbsp onion powder
1 1/2 Tbsp Mexican oregano
Pepper (to your liking)
Salt (to your liking)
2 Tbsp Tomato paste
2 Tbsp Worcestershire sauce
2 Tbsp brown sugar
2 Tbsp beef bouillon (I used knorr) you can use Better than bouillon beef flavored
2 Tbsp Maseca corn flour with 1/4 C. water
2 1/2 C. Beef broth (as needed)
2 jalapenos (optional) I put 2 for my Ron
