Texas Beef Chili Recipe (No Beans)
My recipe has all the true Texas flavors with a couple of additions. Most Texas chili recipes are heavily spiced with no tomatoes. I do, however, use tomato sauce to brighten the flavor just a bit. All the spices combined tend to be a little bitter when cooking over time. The tomato sauce balances this flavor, IMO.
Now, don’t take my ‘Texan’ card, but my recipe isn’t ALL beef. Although you could make this recipe using only beef, I like the addition of pork breakfast sausage. Not to mention, pork sausage is less expensive per pound than beef, therefore it’s easy to stretch this meal to feed a lot of people.
Also, my not-so-secret ingredient in this chili is unsweetened cocoa powder. Now don’t hit the back button just yet! It doesn’t at all taste like ‘chocolate chili’ like my children used to say. The cocoa powder adds a unique richness and background flavor that blends deliciously with the spices in chili, sort of like a mole. Not to mention, the cocoa powder balances the acidity in the tomato sauce.

Recipe for Easy Ground Beef Chili:
INGREDIENTS:
3 pounds Certified Angus Beef ® ground beef
1 onion, diced
3 cloves garlic, minced
1/4 cup chili powder
1 tablespoon ground cumin
1 tablespoon ancho chili pepper
1 tablespoon coarse kosher salt
2 jalepeños, stems removed and finely minced
1 (28-ounce) can diced tomatoes
1 (15-ounce) can tomato sauce
1 (15-ounce) can red kidney beans, drained and rinsed
1 (15-ounce) can pinto beans, drained and rinsed
1 (6-ounce) can tomato paste
Optional toppings: shredded sharp cheddar, sour cream, diced green onions

We’re taking the chill off in the kitchen today with our Chili recipe. What’s great about chili is you can substitute any kind of meat whether is ground beef, wild game or even chunk meat. We’re giving you a great seasoning base and some ideas for your chili and from there you can customize to suit your tastes. Beans- no beans… hey I like a bean to give it an even heartier feel. So we hope you enjoy our chili recipe!

8- 10 servings
Cowboy Chili
2 pounds ground beef (wild game, chunk meat, etc.)
1 large yellow onion, chopped
2 (10 oz.) can Rotel (we used chunky), drained
1 Rotel can water
1 (15 oz) can tomato sauce
1 (16 oz) can kidney beans, drained (or your bean choice)
Green Chile Chipotle Relish (available or 3 - 4 chipotle peppers in adobo sauce, chopped or to taste
1/3 cup chile powder
½ tsp cumin
2 tsp oregano powder
2 tsp paprika or smoked paprika
2 tsp salt
3 tsp minced garlic
1. In a large pot or 12” Dutch oven brown the hamburger over medium high heat. Season with salt and pepper or seasoning of your choice, to taste. As the meat begins to brown, stir in the onions. Continue cooking until the meat has fully browned and onions are tender. If there is a lot of excess grease, drain.
2. Stir in the Rotel, water, tomato sauce, beans, chipotle peppers or relish. Stir in the seasonings. Adjust taste, if needed.
3. Cover and cook over medium-high heat until it reaches a boil. Boil a couple minutes. Reduce heat and simmer for about 40 minutes, stirring occasionally.
4. Serve warm with cheese, onions, sour cream, etc.

Over The Top Texas-Style Smoked Chili Recipe | Heath Riles BBQ

Ingredients:
• 1 whole white onion, diced
• 1 jalapeño, diced
• 1 tbsp olive oil
• Heath Riles BBQ Beef Rub
• Heath Riles BBQ Garlic Jalapeño Rub
• The W Sauce Fireshire
• 3lbs Ground Chuck
• 1lb Mild Breakfast Sausage
• 1tbsp Ancho Chili Powder
• 1 tsp cumin
• 28oz diced tomatoes
• Rotel
• 15oz tomato sauce
• 6oz tomato paste
• 3.5oz of beef broth
• 1 can of Miller Lite
Directions:
1. Get your smoker fired up to 250-275º.
2. Dice your onion and jalapeño.
3. Place cast iron dutch oven on the smoker and allow it to heat up.
4. Add 1 tbsp olive oil, diced onion and jalapeño, Heath Riles BBQ Garlic Jalapeño and Beef Rubs, and The W Sauce Firesire to the dutch oven. Allow vegetables to brown and soften.
5. Roll 3lbs of ground chuck and 1lb of mild breakfast sausage into a ball. Season with Heath Riles BBQ Beef and Garlic Jalapeño Rubs.
6. Place meat on metal cooling rack and place over dutch oven. Allow it to cook for an hour.
7. After 1 hour, add 1tbsp ancho chili powder, 1tsp cumin, 1 28oz diced tomatoes, 1 can of rotel, 15oz can of tomato sauce, 6oz tomato paste, 3.5oz of beef broth, and 1 can of Miller Lite to your dutch oven. Stir and place meat back over the dutch oven.
8. Bump smoker to 325º and let it cook for another hour and a half.
9. After an hour and a half, place meat in the dutch oven and break it up. Let it cook for another 30 minutes to an hour.
10. Pull chili after 3.5-4 hours of total cook time.

How to Make the Best Chili Ever
This hearty, meaty chili will fill up the hungriest of appetites. This recipe makes a big ole batch of chili. This recipes contains 4 lbs of meat! 3 lbs of ground meat and 1 lb of chuck roast or stew meat. I love this recipe with venison instead of beef as well. Any combo of meats works but having plenty of ground meat plus some large chunky meat that will break down and get super tender during a 6-8 hour cook is the best.

This recipe will require a large slow cooker or dutch oven. It has a medium spiciness level. You can adjust that by adding more or less chili seasoning.
