How To make Texas Chili'N Pasta
1 pound pasta
uncooked
2 tablespoons vegetable oil
1 1/2 pounds beef chuck :
diced in 1/4-inch
chunks 3 garlic clove -- minced
2 tablespoons chili powder
1 tablespoon ground cumin
1/2 teaspoon cayenne powder
1/2 teaspoon salt
15 ounces canned tomatoes
3 cups water
1/4 cup corn meal
2 tablespoons cold water
Prepare pasta according to package directions, drain. Heat oil over medium hig h heat in a large, heavy pan. Add meat and garlic and brown lightly. Add seas onings and stir to coat meat. Add tomatoes and water. Bring to a boil, then r educe heat, cover and simmer 1-1/2 hours, stirring occasionally. Add cold wate r to cornmeal and stir to make paste. Stir into hot beef mixture. Continue to cook and stir for 20-30 minutes uncovered until desired consistency. Serve ov er hot pasta.

This time I try to make a spicy chili and some cornbread at the campfire. I use some parts from my Trangia and my little skillet.
Recipes:
Campfire Chili - 2 servings - 60 minutes
- 1 Red onion
- 1 Red bell pepper
- 2 garlic cloves
- 1 red chili
- 2 tomatos
- 100 g ground beef
- 1 cup red kidney beans
- 2 tbsp tomato paste
- 2 tsp bbq sauce
- 1/3 can of beer
- juice of 1/2 lime
- ancho chili powder
- chipotle chili powder
- cumin powder
- rosmary
- oregano
- basil
- salt
- pepper
- tbsp pickled onions/serving
Cornbread - 2 servings - 20 minutes
- 1/2 cup corn flour
- 1/2 cup all purpose flour
- 1 tsp baking powder
- 3 tsp sugar
- 1 tsp salt
- 1 1/2 tbsp dehydrated milk
- 1 egg
- 1/2 cup water
- butter for the skillet

Venison Chili Mole recipe
There's nothing quite like a big bowl of hot venison chili on a cold day. But if you want to add a new touch to your old favorite, we've got the recipe for you. It's called venison chili mole...and the special ingredient is chocolate!
In a large pot, brown two pounds of ground venison, green pepper, green onions - complete with tops, and chili peppers on low to medium heat.
When the meat is brown, drain off any fat, add a chili seasoning packet and continue to cook for another five minutes. Add a can of chili beans, a can of black beans, worcestershire sauce and a quarter cup of water. Stir in tomatoes and tomato sauce and raise the heat. Grate one double square of semi-sweet chocolate over the chili...or more for a smoother flavor...and stir it in. Bring the chili to a mild boil, reduce the heat, cover and let it simmer for 30 to 45 minutes. Mole is a traditional Mexican sauce...and when it's used in venison chili, it's sure to spice up a cold day!
