How To make True Texas Chili
2 tb Vegetable oil
2 lb Ground Beef
2 md Onions; chopped
2 Garlic cloves; finely chop
28 oz Tomatoes; whole
12 oz Beer
5 tb Chili powder
2 Jalapeno chili; seed & chop
1 tb Cumin
2 ts Paprika
1 ts Sugar
Cayenne pepper (optional) Cheddar cheese; shredded Red onion; chopped Avocado; sliced Heat oil in 6-quart saucepan. Add ground beef, onions and garlic and saute until meat is browned. Stir in next 7 ingredients and bring to boil over medium-high heat. Reduce heat to medium-low and simmer, uncovered, about 45-55 minutes. Taste and season with salt, pepper and cayenne pepper, if
desired. Ladle into bowls. Garnish with cheese, onion and avocado, if desired. Makes about 8 cups.

Chili Recipe:
3 pounds of ground beef
2 red bell pepper blistered and diced
4 Fresno chilis
4 guajillo chilis
2 ancho chilis
2 tbsp chipotle in adobo
1 large yellow onion diced
3 medium carrots diced
8 oz canned tomatoes
4 cups beef broth
1 12 oz can of IPA or stout for a richer broth
1 5-6 oz can tomato paste
1 tbsp Worcestershire sauce
1 1/2 tsp whole cumin
1 tsp whole coriander seeds
1/2 or 1 tbsp chili powder depending on spice tolerance
1 whole cinnamon stick
2 tsp smoked paprika
2 tsp onion powder
2 tsp garlic powder
1 15 oz can kidney beans
1 15 oz can of pinto beans
1 tbsp brown sugar
3 tsp kosher salt
2 tsp black pepper
Toppings:
Fried tortilla chips
Thinly sliced green onions
Grated cheddar cheese
Pickled red onions (optional)
Sour cream
Cast iron cornbread recipe:
3/4 cup cornmeal
1/4 cup polenta
1 cup all-purpose flour
1/3 cup caster sugar
1 tsp kosher salt
2 tsp baking powder
1 tsp baking soda
1 1/4 cups full-fat buttermilk
6 tbsp unsalted butter (2 for cast iron pan before adding batter)
1/3 cup avocado oil
2 whole eggs
Serve with honey, butter, and sea salt

We think this is the best Texas chili recipe and the internet seems to agree. In this recipe, we use the flat of a brisket for creating tender morsels of chili meat that doesn't come out tasting like pot roast.
This recipe is in the style of Texas barbecue restaurants and is a chili recipe with no beans.
It's a bit like a chile con carne recipe, but we slowly simmer these chunks of beef until they are one solid soup. In fact, you might find that using an immersion blender after the chili cooking gives you even more of a Texas quality chili. Just buzz it a few times to make it extra broken up and mixed well. :)
Ingredients Used:
• 4 slices thick cut bacon
• 3-4 lb. beef brisket, trimmed
• Kosher salt, pepper, onion powder – for liberally sprinkling on the meat while browning.
• 2 c. white onion, small diced (one large onion)
• 5 garlic cloves, pressed through a garlic press
• 1 T paprika
• 1 T. cumin powder
• 3 ½ T Texas chili powder, such as Mexene or Gebhardt’s
• ½ t. dried thyme
• ½ t. chipotle chile powder
• ½ t. salt
• 1 quart beef broth
• ½ c. strong black coffee (you can save this from your morning coffee)
• 28 oz. can whole tomatoes, in juice
