How To make Texas Cheese Enchiladas
12 Corn tortillas
2 x Hortening (lard best)
4 tb Cooking oil
2 x Lour
2 Yellow onions, large, choppe
2 x Hile powder or ground
4 c Grated cheese---either Longh
Allow 3 enchiladas per person. Use a Pyrex utility pan (13-1/2" x 8-3/4") to cook them. Lightly grease the utility pan (for authenticity use lard). Preheat the oven to 400. Chop onions and grate cheese. Saute the onions lightly in 2 T. oil. Melt lard in a skillet; stir in the flour and make a light roux. Add ground chiles or chile powder, water and salt, and cook until thick. Of commercial chile powders, Gebhardt's from San Antonio is best, but not as good as ground *chiles pasillas*. Heat the remaining oil in a skillet. Using kitchen tongs, dip each tortilla in hot oil until well softened (about 15 seconds). Hold tortilla up and allow oil to drip back into the skillet. Using the tongs, dip tortillas in chili gravy. Place the tortilla in the Pyrex pan, put a good-sized pinch of cheese and onions in the middle, and roll the tortilla, placing the flap side down. Continue filling and rolling tortillas until the pan is full. Pour more chili gravy on top of the enchiladas, sprinkle the top generously with more grated cheese, and pop into preheated oven. Cook only until the cheese begins to bubble (about 10 minutes). Serve immediately.

1/2 tsp ground cumin
1/2 tsp granulated garlic powder
1/2 tsp granulated onion powder
1/2 tsp salt
pepper to taste
14 to 16 corn tortillas
1/3 cup oil (for softening corn tortillas)
12 oz Colby Jack cheese
ENCHILADA RED SAUCE INGREDIENTS
4 Tbsp cup oil
1/4 cup all-purpose flour
2 Tbsp light chili powder
1/2 tsp ground cumin
1/2 tsp garlic powder
1/2 tsp onion powder
14.5 oz can of chicken broth
*extra water if needed
salt and pepper to taste
**You can substitute the broth with 16 oz of water
and 1 Tbsp chicken bouillon powder

Today we’re gonna answer that question.
Now enchiladas are a favorite in our kitchen but it’s always a war between how they’re gonna get made.
My Mom is going to make her Tex-Mex style enchiladas using Wolf Brand Chili and Longhorn Cheddar, while I’m gonna whip up my enchiladas with a more traditional red sauce and topped with queso fresco.
Let’s fire it up and make some ENCHILADAS!
HOW TO MAKE A CAN OF ENCHILADA SAUCE TASTE LIKE THE RESTAURANT'S | RICHARD IN THE KITCHEN
In this video I show you how to make a can of enchilada sauce taste like the restaurant's. Normally I make my own sauce, but it you don't have all of the required ingredients for that and all you have is a can of sauce, but want it to taste like it does at your favorite Mexican restaurant, this recipe is for you. With just a few ingredients your can of enchilada sauce will turn out to be restaurant quality.
Shopping List:
10 ounce can of Old El Paso Red Enchilada Sauce
1 tbsp. salted butter
1 tbsp.all purpose flour
1 cup of chicken or beef broth
Pinch of salt and black pepper
Directions:
In a saucepan over medium heat melt the butter. When it becomes foamy add the flour and stir 1 minute until well combined and the flour taste has cooked out.
Stir in the can of enchilada sauce, broth and salt and pepper. Stir well and bring to a boil.
Reduce the heat to low and simmer 15 minutes or until the sauce has slightly thickened.
Keep warm until ready to serve over enchiladas.
Enjoy!

Ingredients
8 chiles guajillos (mild)
4 cups chicken broth or 4 cups hot water 2 1/2 Tbsp chicken bouillon
2 tomatoes or 4oz tomato sauce
1 tsp ground cumin (optional)
Oil
4 cups pinto beans (w/ 3 cups broth or water
1/2 cup lard or oil of choice
1 tsp salt
3 cups Mexican cheese blend
Serve with Mexican rice, iceberg lettuce, pico de Gallo, Mexican crema
TIP❣️
If you have hearty eaters add 8oz of chorizo to the beans
