Easy Cowboy Caviar Recipe
The best game day dip, Cowboy Caviar...or Texas Caviar is simple to make with whole, fresh ingredients like beans, black eyed peas and vegetables.
-------------------------------------FULL RECIPE BELOW----------------------------------------------
1/2 cup olive oil
▢ 3 tablespoons honey
▢ 1/4 cup apple cider vinegar
▢ 1 1/2 teaspoon chili powder
▢ 1 teaspoon garlic powder
▢ 1 teaspoon Salt
▢ 1/2 teaspoon ground pepper
▢ 1 pound Roma tomatoes seeded and diced
▢ 1 15 ounce can black-eyed peas drained and rinsed
▢ 1 15 ounce can black beans drained and rinsed
▢ 1 1/2 cups sweet corn, frozen and thawed
▢ 1 red onion, diced
▢ 1/2 cup diced red bell pepper
▢ 1/2 cup diced yellow bell pepper
▢ 1 jalapeno, seeded and diced
▢ 1 cup chopped cilantro or parsley
Instructions
In a small bowl, whisk together the olive oil, honey, cider vinegar, chili powder, garlic powder, salt and pepper. Set aside.
In a large bowl, combine the tomatoes, black-eyed peas, black beans, corn, onion, bell peppers, jalapeño and cilantro.
Pour the dressing over the salad and toss to combine.
Cover and chill for one hour.
Serve with chips or use as a flavorful topping.

INGREDIENTS
1 can black beans rinsed and drained
1 can black eyed peas rinsed and drained
1 cup tomatoes seeded and finely diced
1 jalapeno seeded and finely diced
1 cup corn can be fresh, canned or thawed from frozen
3/4 cup red and/or orange bell pepper seeded and finely diced
1/2 cup red onion finely diced
1/3 cup olive oil
1/4 cup lime juice
1 tablespoon honey
1 teaspoon chili powder
1 teaspoon cumin
salt and pepper to taste
INSTRUCTIONS
Place the beans, black eyed peas, tomatoes, jalapeno, corn, bell pepper, and onion in a large bowl.
In a small bowl, whisk together the olive oil, lime juice, honey, chili powder, cumin and salt and pepper.
Pour the dressing over the bean mixture and toss gently to coat. Serve as a salad or with chips.
