2 1/2 lb Broiler-fryer chicken, -cut into 8 pieces 1/4 c Soy sauce 1/4 c Sugar 1/4 c Sake (Japanese rice wine) Or cooking sherry 1/4 ts Salt 1/4 ts Monosodium glutamate (opt) 1 tb Vegetable oil 1 ts Grated fresh ginger root 1. In a large bowl combine all ingredients. Marinate chicken pieces 3 to 4 hours. 2. Place chicken skin-side-down in a deep, 3-quart, heat- resistant, non-metallic baking dish and heat in Microwave Oven 12 minutes. 3. Turn chicken skin-side-up and heat an additional 6 minutes or until chicken is fork-tender. Baste occasionally with sauce.

You probably know this, but chicken thighs will give you extra juicy chicken because of the higher fat content. It’s also much more forgiving if you happen to overcook it. Chicken breast, on the other hand, is much less forgiving. I’ve tried this recipe with both chicken thighs and breast, though, and both taste great! So, just use whichever you prefer or have on hand.

Teriyaki Chicken - Super Quick Edition

For the Teriyaki Sauce: - Light Soy Sauce- 3 tbsp (Preferably Kikkoman) - Brown Sugar- 3 tbsp - Apple Cider Vinegar- 1 tsp - Sesame oil- 1 tbsp - Ginger grated- 1 tsp - Garlic grated- 1 tsp
Other Ingredients: - Salt for seasoning- 1/4 tsp - Pepper powder for seasoning- 1/4 tsp - Oil for pan frying the chicken- 1.5 tbsp - Sesame seeds- 1 tsp (as garnish) - Spring onion greens, chopped- 2 tbsp (as garnish)
Preparation: - Cut the boneless thighs into bite sized chunks. - Grate the ginger & garlic and prepare the Teriyaki Sauce.
Process: - Heat oil in a pan and then add the chicken pieces. Season with salt and pepper powder. - Fry on high heat for 5-6 mins till the water dries up and the meat is browned. - Now add the Teriyaki Sauce (prepared earlier), give a mix and cook on medium heat for 3-4 mins till the sauce is absorbed and coats the chicken pieces. - Garnish with the sesame seeds and chopped spring onion greens.
