How To make Teatime Scones
2 c Flour, all purpose
1 tb Sugar
1/2 ts Baking powder
1/2 ts Baking soda
1/4 ts Salt
1/3 c Butter, chilled
1 ea Egg
1/2 c Buttermilk
1 t Vanilla
In large bowl, combine flour, sugar, baking powder, baking soda and salt. With a pastry blender or two knives cut in butter until mixture resembles coarse crumbs. In separate bowl, combine egg, buttermilk and vanilla. Using fork, stir into dry ingredients to form a soft dough. Gather into ball. Turn out onto lightly floured surface; knead lightly 10 times. With lightly floured hands, pat dough in 1/2 in thick round. Using 2 1/2 in. cookie cutter, cut dough into rounds, gathering scraps together until dough is all used up. Place rounds on lightly greased baking sheet. Bake in 425F (220C) oven 12 to 15 minutes or until golden brown and risen. Let cool on wire racks. Serve warm.

3 cups (450 g) all-purpose flour
¼ cup (50 g) granulated sugar
4 tsp (12 g) baking powder
½ tsp (2.5 g) salt
2 tsp (10 mL) finely grated citrus zest (lemon, lime or orange)
¾ cup (175 g) cold butter, cut into pieces
¾ cup (175 mL) cold milk (1% or 2%)
1 large egg
1 large egg yolk (reserve the white for brushing the scones)
½ cup (125 mL) add-ins (**see note below)
cinnamon sugar for sprinkling
Preheat the oven to 375 °F (190 °C) and line 1-2 baking trays with parchment paper.
Add all the dry ingredients into a large mixing bowl. Add the grated orange zest and mix in. Add the butter and crumble using your clean fingers until no large pieces are visible and the mixture is a rough, crumbly texture. Use your hands to rub the mixture between your palms to flatten any butter pieces – this helps to make the scones flaky.
In a separate bowl, whisk the egg, egg yolk and the milk together. The add into the flour mixture all at once. Use a spatula or wooden spoon to mix everything together just until it starts to come together but it is still rough and crumbly. Turn everything out onto a clean surface and sprinkle the add-ins overtop. Use your hands to bring the dough together, and to flatten and fold the dough over a few times
Flatten the dough using a rolling pin, to just under 2.5 cm thick and use a cookie cutter (or any glassware) to cut out scones. Arrange these on the baking tray, leaving enough space between them. Brush the tops of the scones with the egg white and sprinkle with cinnamon sugar. Bake the scones for about 18 minutes, until golden brown on the bottom and lightly browned on top. Cool the scones on a rack
The scones are best enjoyed out of the oven.

EGGLESS SCONES with jam and cream | Tea Time Treat
These easy to make, flaky, and buttery Eggless Scones with jam and cream are sure to become a family favourite treat. Perfect with a cup of coffee or tea!
INGREDIENTS:
1 cup all-purpose flour
1/8 cup castor sugar
1/2 tbsp baking powder
75 g salted butter, cold and diced
90 ml fresh cream plus more for brushing

Bake in a pre heated 180 degree oven 20-25 minutes or till golden brown .

Fruit Scones
makes 8 to 10 scones
500g x Self-raising Flour
75g x Caster Sugar
125g x Butter
1tsp x Baking Powder
2 x Eggs (+ 1 for glazing)
90g x Dried Fruit
Milk to Bind
Chantilly Cream
300ml x Double, Heavy or Whipping Cream
30g x Icing Sugar
1 tsp x Vanilla Extract
Strawberry Jam and Fresh Strawberries
1. Place the flour, baking powder, sugar, and butter into a mixing bowl. Rub between your fingers and thumbs until it resembles breadcrumbs.
2. Chop the dried fruit as small as you can and add to the flour mixture. Mix and make a well in the centre.
3. Crack in two eggs and add a splash of milk. Mix with a fork until it comes together to form a dough. You may need to keep adding small amounts of milk until you get a firm dough. If the mix becomes too wet just add more flour until it feels firm to the touch.
4. At this stage, preheat the oven to 170°C and lightly flour a workbench. Turn out the dough and press together with your hands to form a round shape. Roll out using a rolling pin to 1.5 inches in thickness.
5. Grab a cookie or sone cutter and being to cut out your scones. Press down firmly without twisting the cutter. Place the scones onto a baking sheet lined with parchment paper.
6. Glaze the tops of the scones with a beaten egg. Place in the preheated oven and bake for 18 to 20 minutes. Place onto a cooling rack to cool.
7. For the Chantilly cream place the cream, icing sugar, and vanilla extract into a mixing bowl and whip using a whisk until it holds its shape.
8. Once cool break or cut the scones in half and fill with a good dollop of chantilly cream and a spoonful of strawberry jam. Finish with some slices of fresh strawberries.
