Black Eyed Pea Salad: My Favorite way to eat Black Eyed Peas when it's warm outside!
I first had black-eyed pea salad on a trip to Nashville, TN at Hattie B’s restaurant and I was hooked. I loved it so much that making it home was a must. My recipe is adapted from the version in the restaurant, but it differs slightly. I quick soak my beans in water and smoked paprika, and combine a vinaigrette made with two kinds of vinegar, jalapeños, scallions, and herbs.
Ingredients Needed:
For the Vinaigrette:
1/2 cup extra virgin olive oil
1/4 cup white distilled Vinegar
1/4 cup malt vinegar
1 teaspoon fresh thyme minced
1 teaspoon fresh parsley minced
2 teaspoons ground black pepper
2 teaspoons kosher salt
1 red bell pepper diced
2 jalapeno peppers, stem and seeds removed, and diced
2 scallions finely chopped
1 garlic clove minced
For the Black Eyed Peas:
2 cups dried Blackeye peas
1 Tablespoon smoked paprika
6 cups water or stock

Coriander powder - 1/2 tsp
Roasted cumin powder - 1/4 tsp
Black salt - 1/4 tsp
Chaat masala - 1/2 tsp
Chopped mint leaves - 1 tbsp
Chopped coriander leaves - 2 tbsp
Salt to taste
Oil - 2 tsps
Half lemon juice

Black eyed beans salad - Greek and Vegan!
You 'll need:
1/2 lb black eyed beans/ peas
1 dry onion
3 green onions
Parsley
1/4 cup olive oil
1/4 cup vinegar
Salt and pepper
Soak your beans in water over night.
Boil them for 5 minutes then drain them and replace the water with freshly boiling water.
Boil them for 30-40 minutes, until soft but not flaky. Then drain them and leave them aside to cool down.
Clean and chop the green onions, dry onion and parsley.
Mix the oil with the vinegar and the salt and pepper.
In a big salad bowl, put the beans, then the onions and then the oil and vinegar mix. Stir very well.
Add the parsley and stir again.
Enjoy!
Delicious Black-Eyed Pea Salad For New Year's Day
New Year's Day Food: Black-Eyed Pea Salad
You'll need:
2 cans of black-eyed peas, drained and rinsed
2 roma tomatoes, cored and diced
1/2 of a large red onion, diced
1 red bell pepper, diced
1 orange bell pepper, diced
1 yellow bell pepper, diced
1 fresh jalapeno, diced
4 green onions, chopped
1/3 cup cilantro
1/4 cup rice vinegar (natural, unseasoned)
2 tbsp olive oil
1/2 tsp brown sugar
salt and pepper to taste
Directions:
In a small bowl, mix the brown sugar and vinegar until sugar is dissolved. Slowly whisk in oil. Add salt and pepper to taste.
In a large bowl, add black-eyed peas, tomato, red onion, bell peppers, jalapeno, and green onion to a large bowl and toss/mix well.
Pour dressing over salad and toss/mix to coat. Stir in the cilantro as desired and season with salt and pepper to taste.
