How to Make Authentic Chinese Mapo Tofu (麻婆豆腐)
The ever popular Sichuan Mapo Tofu! If you're a bit on the fence about tofu, this is definitely one of the best 'gateway tofu' dishes. This dish is the Mala flavor profile, meaning that it's going to feature a combination of heat and that characteristic numbing flavor of the Sichuan peppercorns.

Mapo tofu (麻婆豆腐) is a popular Chinese dish from Sichuan. This dish consists of tofu set in a spicy sauce, based on douban 豆瓣 (fermented broad bean pasteand chilli paste), along with minced meat, usually pork or beef.

Ingredients:
Serves 4
Stir-frying the meat

1 tablespoon of oil
180g of minced beef - can be replaced with other types of meat
Once cooked, remove from wok for use later.
Putting the rest of the dish together

1 tablespoon of oil
5 cloves of garlic - minced
1 thumb size ginger - minced
1 tablespoon of spicy broad bean paste (辣豆瓣酱)
1 tablespoon of hot & spicy sauce (香辣酱)
2 teaspoons of grounded Sichuan peppercorn
Add cooked minced beef
1.5 cups of chicken stock (can be replaced with water)
1 piece of blanched Chinese tofu - get one that's suitable for frying
Thicken the gravy with some cornstarch solution

This Homestyle Chinese Quick Braised Tofu with Minced Meat is a classic dish that almost all Chinese moms know how to make. This dish is perfect with rice or porridge. Minced pork is added to lend different texture to the tofu ; however, if you are vegetarian, you can omit it or replace it with mushrooms. If you are a Muslim, you can substitute minced chicken for the minced pork and leave out the Chinese cooking wine. Consider adding mushrooms or long beans to make the dish a one-dish meal. Ingredients:
Serves 4 pax

150g minced pork (you can use minced chicken or mushrooms as well)
5g minced young ginger
3 cloves of chopped garlic
1 teaspoon black bean paste 黑豆酱
1 teaspoon soya bean paste 幼豆酱 (can be replaced with miso paste)
1 tablespoon light soy sauce
0.5 teaspoon sugar
200ml water
200g firm tofu / bean curd / tau kwa
A few dashes of white pepper
2 tablespoons premium dark soy sauce
Some cornstarch solution
1 tablespoon Chinese cooking wine (Shaoxing Huatiao wine)
0.5 teaspoon sesame oil
2 stalks of chopped spring onion
FYI - if you want to remove some of the raw bean taste from your tofu, please blanch them first before pan-frying them.

Deep Fried Tofu in Szechuan Sauce
This is a great quick flavoursome recipe. Such great flavours and textures and yes, its vegan ! You can service this with rice, steamed veg or even with some chow mein like me. You can find my recipe to the chow mein before this video.
Prep time: 4 mins | Cooking time: 6 mins | Portions: 4 servings
Ingredients:
-~200g deep fried tofu (can be brought ready made from any Chinese supermarket, I prefer this ready deep fried tofu if I'm honest..),
-4 garlic cloves, finely sliced,
-palm size of ginger, fine long strips,
-2 spring onion sliced,
-3 tbsp light soy sauce,
-1 tbsp oyster sauce (Do not include if vegan),
-2 tbsp szechuan chilli paste,
-roughly 1/4 cup of water (add more if required).

Szechuan Tofu Stir Fry (Vegan/Vegetarian)
I had a blast going vegetarian for a whole month. I was able to come up with some delicious recipes that kept my mind off of meat cravings. Here is a tofu and veggie szechuan stir fry, the sauce makes or breaks this dish!
Ingredients:
1lb High Protein Tofu
1/4 Sweet Onion
1/4 Large firm tomato
1 cup green beans
1/2 cup water chestnuts
1 cup Snow peas
Sauce:
1 Tbsp minced garlic
2 Tbsp low sodium soy sauce
2 Tbsp no salt added tomato sauce
1/2 Tbsp vinegar (using white here)
1/2 Tbsp chili paste
1.5 Tbsp Honey (or Agave Nectar or Sugar for vegan option)
1/2 Tbsp ground ginger
3 Tbsp water
