How To make Sweet and Spicy German Style Mustard
2/3 c Mustard Seed
1/2 c Mustard, dry
1 c Water, cold
2 c Vinegar, cider
1 Onion, finely chopped
4 Garlic, clvs., minced
1/4 c Sugar, brown
2 ts Salt
1 ts Cinnamon
1/2 ts Allspice
1/2 ts Tarragon
1/4 ts Tumeric
3 ts Honey
Directions: Combine seeds and mustard with COLD water. Allow to sit overnight in the refrigerator. Combine all remaining ingredients except honey. Simmer uncovered 10-15 minutes or until liquid reduced by half. For a hotter mustard, reduce liquid by more than half. Pour this mixture through a strainer, into the mustard and seed mixture. Blenderize thoroughly. Cook in a double boiler until the consistancy of gravy. Add the honey. This will keep refrigerated several years. Many different flavors of mustard can be made by modifying this basic recipe. Substitute wine for the cold water, etc. Many other spices may be added also.....

This is REAL Mustard... or what I think original mustard used to be! I was reading about where mustard came from and the first use of mustard as a condiment came from Ancient Rome and supposedly they used unfermented wine mixed with ground mustard seed to make hot must... So I wanted to give it a try and honestly... it's REALLY GOOD!

Honey Beer Mustard Recipe
Honey Beer Mustard Recipe - Ever wondered how to make mustard at home? Homemade mustard is really easy, and in its simple for needs just two ingredients. You can use this honey mustard recipe, for sandwiches, hamburgers or salad dressings.
Ingredients:
75 mL (5 Tbsp) mustard seeds (mix and match)
5 mL (1 tsp) dry hot mustard
2 mL (½ tsp) ground turmeric
2 mL (½ tsp) salt
15 mL (1 Tbsp) honey
75 mL (1/3 cup) vinegar
75 mL (1/3 cup) beer
Method:
In a non reactive glass or stainless bowl, combine all the ingredients.
Cover and let stand for 2-3 days on the counter or in the fridge.
Put the ingredients in a blender and process until smooth.
If the mix becomes too thick; add a tablespoon or two of water.
