How To make Sweet Potato Cheesecake
Crust: 1 1/2 c Graham cracker crumbs
1/4 c Granulated sugar
1/3 c Butter or margarine; melted
Cheesecake: 3 3 oz pkgs cream cheese; soft
1 c Granulated sugar
1/4 c Light brown sugar
1 3/4 c Sweet potatoes, mashed
2 Eggs
2/3 c Evaporated milk; undiluted
2 tb Cornstarch
1/4 ts Ground cinnamon
1/8 ts Ground nutmeg
Topping: 2 c Sour cream; room temperature
1/3 c Granulated sugar
1 ts Vanilla extract
Recipe by: Sweet Potato Festival, Vardamon, Mississippi, 1994 Crust: Combine crumbs, sugar, and butter in bowl. Press onto bottom and 1 inch up on sides of 9 inch springform pan. Bake at 350 degrees for 6 to 8 minutes. Do not allow to brown. Remove from oven and cool. Cheesecake: Beat cream cheese, sugar and brown sugar in large bowl. Beat sweet potatoes, eggs, and milk. Add cornstarch, cinnamon and nutmeg. Beat well. Pour into crust. Bake at 350 degrees for 55 to 60 minutes or until edge is set. Topping: Combine sour cream, sugar and vanilla. Spread over warm cheeseca Return to 350 degree oven and bake 5 minutes. Cool on wire rack. Remove side of pan and chill several hours or overnight.

INGREDIENTS I USED:
Preheat oven to 425 degrees. Bake for about 10 mins and then reduce oven temperature to 325 degrees to continue baking another 1 hr. 15 mins or until your desired doneness.
1 Deep Dish Pie Crust
*Sweet Potato Pie Filling
1 C Sweet Potatoes (Roasted)
1/2 Stick Butter
1/2 C Sugar
1 Lg Egg
1/4 C Evaporated Milk
1/4+ Tsp Nutmeg
1 Tsp Vanilla Extract
Dash of salt
*Cream Cheese Filling
8 oz. Cream Cheese
1/4 C Sugar
1 Egg
1 Tsp Vanilla Extract
1 Tsp Creme Bouquet

Ingredients:
Graham cracker crust:
1 1/4 cup graham cracker crumbs
1/4 cup melted unsalted butter
1/4 cup sugar
Filing:
Part 1:
2 cups pureed sweet potatoes
1/4 cup sour cream
1 can sweetened condensed milk
1/4 cup maple syrup
Part 2:
(3) 8 oz. packages of cream cheese (room temperature)
3/4 cup sugar
1 1/2 tsp ground cinnamon
1 tsp ground nutmeg
1/2 tsp salt
(3) Large eggs (room temperature) (Once Part 1 and Part 2 are combined)
Topping:
3/4 cup maple syrup
1 cup whipping cream
Equipment:
(2) mixing bowls
Blender or Food Processor
Whisk
Mixing spoons
9 inch Springform pan
Heavy Duty aluminum foil
Baking pan
Rolling pin
Large freezer bag
Medium pot
Non-stick cooking spray

Sweet Potato Swirl Cheesecake
Crust
1 sleeve Graham Crackers
1/2 c chopped pecans
1/2 c melted butter
1/3 c brown sugar
Pinch of salt
Batter
3 bricks cream cheese
1/4 c flour
3/4 c sugar
3 eggs plus
2 t vanilla
1 T lemon juice
1/4 c milk
Sweet Potato Swirl
1 c batter
1 c mashed cooked sweet potato
1 egg
1/2 c brown sugar
2 t cinnamon
1 t pumpkin pie spice
1. Preheat oven to 350 f
2. Crush Crackers, nuts and brown sugar together and mix with melted butter.
3. Press into springform pan and bake for 10 minutes, then set aside to cool.
4. Cream together softened cheese, sugar and gooey flour.
5. Add lemon juice, vanilla, milk and eggs. Mix until smooth.
6. Reserve 1 cup of batter and mix with 1 cup mashed sweet potato, cinnamon, pumpkin pie spice, egg and brown sugar.
7. Reduce oven to 340f and place a cake pan half full of hot water on the bottom rack.
7. Add batter to crust and swirl sweet potato swirl on top.
8. Bake 1 hour and check for doneness. Cake should be mostly set with a slightly jiggly center.
9. Turn off oven and allow cake to set in warm oven another 30 minutes.
10. Remove from oven and allow to cool completely before covering and chilling 4 hours minimum.

2 1/2 sticks butter-unsalted
1 cup All Purpose Flour
3 tsp Lemon Juice
1/2 Tsp Salt
1/2 Tsp Lemon Extract
1 1/2 Tsp Butter Vanilla
2 Tsp Cookie Nip Flavor
or vanilla extract
1 Tbsp Ground Cinnamon
1 1/2 Tsp Nutmeg
1/2 Tsp All Spice
2 pie crust ( Pillsberry)
CREAM CHEESE FILLING
2 - 8oz block cream cheese
2 Lg Eggs
1/2 cup granulated sugar
1/3 cup sour cream
1 Tbsp Cookie Nip or Vanilla Extract
Bake Time: 50 - 55mins (depending on your oven ) if you have a confectioner oven, it may take 35 to 45 minutes.
