Betty's Traditional Sweet Potato Pie
Betty demonstrates how to make Traditional Sweet Potato Pie. This is great for the holiday season and a wonderful alternative to pumpkin pie!
Traditional Sweet Potato Pie
1 ½ cups mashed, cooked sweet potatoes (I used canned sweet potatoes, drained, and mashed them with a potato masher. You may cook fresh sweet potatoes in salted water until soft, and then drain, cool slightly, and mash, if you prefer.)
¾ cup brown sugar, firmly packed
¾ cup milk
2 eggs, well beaten
1 tablespoon butter, melted
½ teaspoon salt
½ teaspoon ground cinnamon
unbaked pie 9-inch pie crust (I used Sensational Sesame Seed Pie Crust, available in Betty's Kitchen.)

In a large mixing bowl, stir together 1 ½ cups mashed cooked sweet potatoes, ¾ cup light brown sugar, ¾ cup milk, 2 well-beaten eggs, ½ teaspoon salt, and ½ teaspoon ground cinnamon. Beat well, until completely blended. Pour into unbaked pie crust. Cover the top outer edge of the pie crust with strips of aluminum foil to protect it from burning. Bake at 400 degrees F for 10 minutes. Reduce heat to 350 degrees F, and bake 35 minutes, or until a knife inserted in the center comes out clean. Serve warm or cold. Place a dollop of whipped cream on top of each piece of pie, if desired. This is a gorgeous pie, and it tastes wonderful. It is a perfect addition to your holiday table! Enjoy! Love, Betty ♥

INGREDIENTS:
-1 (1 lb) sweet potato
●1/2 cup margarine , softened
●1 cup Splenda granular , sugar substitute
●1/2 cup low-fat milk
●2 eggs
●1/2 teaspoon ground nutmeg
●1/2 teaspoon ground cinnamon
●1 teaspoon vanilla extract
●1/2 teaspoon lemon extract
●1 (9 inch) unbaked pie shells
Homemade Sweet Potato Pie Sweetened with Honey Recipe!
I love baking but I hate commercial sugar. This is a sweet potato pie recipe that we love that is sweetened with honey. I had never tried sweet potato pie before I met Donald and now it's my favorite :)

– 1 pound sweet potatoes
– 1/2 cup coconut oil or ghee, softened
– 1/2 cup raw honey
– 1/2 cup almond milk
– 2 large eggs
– 3/4 teaspoon ground nutmeg
– 3/4 teaspoon ground cinnamon
– 1/2 tsp. sea salt
– 1/4 tsp. ginger
– 1/4 tsp. cardamom
– 2 tsp. vanilla extract
????Preparation????:
TO MAKE THE FILLING:
1. Bake the whole sweet potato in the oven at 425 for for 40 to 50 minutes, or until done. Allow to cool slightly and remove the skin.
2. Place the sweet potato in a large bowl. Add the remaining filling ingredients. Beat on medium speed with a hand mixer until filling is smooth. Pour filling into the cooled pie crust.
TO BAKE THE PIE:
1. You can wrap aluminum foil around the crust edges if you do not want them to get too brown, but we just use a store-bought graham cracker crust so it's not an issue. Bake the pie at 350F for 55-60 minutes or until a toothpick inserted in the center comes out clean. Set the pie aside to cool.
2. Once cooled, serve by itself or with a side of coconut whipped cream.

To make these Leftover Sweet Potato Pie Danish, you will need:
For the Cream Cheese Mixture:
1 Brick of Philadelphia Cream Cheese 8 Oz
1 tablespoon Vanilla Extract
1 Lemon Zest
1/2 Cup Powdered Sugar
Mix Well
For the Leftover Pie Mixture:
1 leftover sweet potato pie
1 teaspoon Pumpkin Spice
1 cup softened honey (microwave the honey for 30 seconds)
Blend until creamy
1 Package of Puff Pastry
Pinch of Flour
For Egg Wash:
1 Egg + 2 tbls of Cold Water
Bake in a 400F Preheated Oven for 20 to 25 Minutes or until golden brown.
For Glaze:
1 Cup of Powdered Sugar
4 to 5 tbls Heavy Whipping Cream
