How To make Summer Vegetable Spaghetti (Lacto)
2 c Small yellow onions; cut in
2 c Chopped; peeled fresh ripe
1 c Yellow squash; thinly sliced
1 c Zucchini squash; thinly slic
1 1/2 c Fresh green beans
2/3 c Water
2 tb Minced fresh parsley
1 Garlic clove; minced
1/2 ts Chili powder
1/4 ts Salt
1/8 ts Fresh ground black pepper
6 oz Tomato paste
1 lb Uncooked spaghetti
1/2 c Parmesan cheese; grated
A lively pasta with summer vegetables, good hot or cold. Combine first 10 ingredients in large saucepan; cook for 10 minutes, then stir in tomato paste. Cover and cook gently, 15 minutes, stirring occasionally until vegetables are tender. Cook spaghetti in unsalted water according to package directions. Spoon sauce over drained hot spaghetti and sprinkle Parmesan cheese over top. Hooray! Mission accomplished...Dhruv now eats spicier food than me and I love to prepare now international recipes with totally Indian style!
This is one of my favorite lunch meal menu for busy days. Just grab any vegetable such as Brussels Sprouts, Asparagus or Broccoli and quickly prepare the pasta meal. I usually avoid to use microwave but when I absolutely run out of time, I pop tomatoes into the microwave for 5 minutes, blend till smooth puree and quickly prepare the sauce for the pasta and works like a charm!
Try this meal and you will sure love to prepare again and again!

Quick and easy vegetable spaghetti that tastes so good, you won't even realize it's loaded with nutritious veggies. This vegetarian pasta recipe has over 1 ½ pounds of vegetables. ⬇️ Recipe Ingredients are below ⬇️
• 12 ounces spaghetti or pasta of choice
• 4 tablespoons olive oil
• 1 cup (140 grams) chopped onion
• 2 medium zucchini, chopped (1/2 pound)
• 2 medium yellow squash, chopped (1/2 pound)
• 3 garlic cloves, minced (1 tablespoon)
• 1/2 teaspoon dried oregano
• 1/4 teaspoon red pepper flakes
• 2 tablespoons tomato paste
• 1 (28-ounce) can whole peeled tomatoes
• One (12-ounce) jar roasted red peppers, drained and cut into 1/2-inch pieces (1 heaping cup)
• 2 to 3 teaspoons mushroom powder, optional, see notes
• 5 cups (1/2 pound) spinach leaves
• Handful fresh basil leaves, plus more for garnish
• Salt and fresh ground black pepper
• Parmesan cheese or nutritional yeast for serving
