Ingredients:
2/3 cup of mashed Sweet Potatoes (we baked 2 sweet potatoes to use)
1/3 cup of unsweetened Pea Protein Milk or unsweetened Soy Milk
1 Tsp Apple Cider Vinegar
1.5 cups of Whole Wheat Pastry Flour
2 Tbsp Sugar (Cane or Coconut)
1 Tbsp Baking Powder
1 Tsp Salt
5 Tbsp of very cold Coconut Oil

Betty's Sweet Potato Biscuits with Grandson, Carter
Betty demonstrates how to make Sweet Potato Biscuits for Easter. This is a sweet biscuit that contains nutritious, mashed sweet potatoes.
Sweet Potato Biscuits
2 cups all-purpose flour
1 tablespoon baking powder
1 tablespoon sugar
1/2 teaspoon salt
1/4 teaspoon baking soda
3/4 cup milk
1 cup cooked, mashed sweet potato (about 1 medium potato)
1 stick butter, cut into small cubes and chilled
2 tablespoons melted butter, for brushing tops
In a large bowl, combine flour, baking powder, sugar, salt, and baking soda. Cut in butter with a pastry blender or fork until mixture is the consistency of coarse cornmeal. Set aside. In a small bowl, stir together milk and mashed sweet potato until well combined. Add milk mixture to flour/butter mixture and mix gently until dough forms a ball. Turn dough out onto a floured surface and form ball into a disc. Pat disc with hands until it is about ¾-inch thick. Use a 2½-inch biscuit cutter to cut the dough into rounds. Gather leftover dough, press into a disc and cut until you have 12 biscuits. Place biscuits in a baking pan, brush tops with melted butter, and bake until golden brown, about 12 to 15 minutes. Remove from oven and let cool in pan on cooling rack for 5 minutes. Transfer from cooling rack to nice serving plate and serve immediately with butter. Yummy!
