How To make Stuffed Mushrooms 4
1 Whole chicken breast
24 md Mushrooms
1/2 Lemon; juiced
2 tb Butter or margarine
1 Garlic clove; crushed
1 ts Chopped parsley
Salt, pepper 1 Egg yolk; lightly beaten
Fine dry bread crumbs Cook chicken in boiling salted water until tender. Drain, reserving broth. Remove skin and bones and dice meat finely. Rinse and dry mushrooms. Remove, finely chop and reserve stems. Sprinkle mushroom caps with lemon juice. Melt butter and add stems and garlic and cook 10 minutes, stirring now and then. Add 2 to 3 tablespoons reserved chicken broth and parsley. Season to taste with salt and pepper. Add chicken and egg yolk and mix. Spoon into mushroom cavities. Arrange on lightly greased baking sheet and sprinkle with bread crumbs. Bake at 350 F 15 to 20 minutes. Serve hot. Created by: Robaire's, Los Angeles (C) 1992 The Los Angeles Times

- 10 - 15 Button Mushrooms
- 2 tbsp Oil
- 1/2 tsp Cumin Seeds
- Green Chilli (chopped)
- 1 tsp Garlic (chopped )
- 1 tsp Ginger ( chopped )
- 1 cup Red Onions (chopped)
- Salt
- 1/2 cup Tomatoes
- 1 tsp Red Chilli Powder
- 1/4 tsp Turmeric Powder
- Button Mushroom (chopped)
- 2 tbsp Coriander Leaves ( chopped)
- Processed Cheese
- 1 tbsp Black Pepper Powder
- 1/2 cup Process Cheese
- Oil

Method
1. In a bowl, add finely chopped mushroom stalks, bread crumbs, grated cheddar cheese, and Italian seasoning
2. Mix everything well and keep this aside. This is your stuffing for the mushrooms
3. Heat a pan with butter and saute the mushroom heads
4. Sprinkle some salt over and flip the mushrooms and saute it
5. Cool the mushroom heads and fill it with the stuffing.
6. Heat a pan with butter and saute the stuffed mushroom heads
7. Close and cook till the cheese melts.
8. Stuffed mushrooms are ready to be served hot. You can eat it as it is or with any dip of your choice.

If you love stroganoff and stuffed mushrooms, you will LOVE this Stroganoff Portobello Mushroom recipe! Made in just 30 minutes, this simple dish is sure to quickly become a weeknight staple!
INGREDIENTS
O Organics® olive oil nonstick cooking spray
4 Portobello mushrooms, stems and gills removed
1/2 medium green bell pepper, diced
2 cups O Organics® grass-fed ground beef (85-15), fully cooked
1 Tbs Worcestershire sauce
1/2 cup plain yogurt
1/2 cup O Organics® Italian blend cheese shreds
1/4 tsp kosher salt
1/4 tsp ground black pepper
DIRECTIONS
1. Preheat oven to 375º. Spray mushroom with nonstick cooking spray and place on rimmed baking sheet. Place in oven and let cook for 5-10 minutes.
2. In a mixing bowl, combine bell pepper, ground beef, Worcestershire sauce, yogurt, salt and pepper. Add 1/2 cup of ground beef mixture to each mushroom. Top each with 1/8 cup of cheese. Cover loosely with aluminum foil and return to oven for 10 minutes. Remove foil and bake additional 10 minutes. Serve.
PRO TIPS
The hamburger mixture would also be great as a topping on spaghetti squash. Spray the aluminum foil with nonstick spray avoids cheese sticking to the foil.

Shopping List:
12-18 mushrooms depending on size
2 tbsps butter
1/4 cup panko bread crumbs
4-8 oz pancetta (or thick cut bacon)
4 oz cream cheese
1/2 onion diced
2 tbs butter
1/2 cup shredded parmesan cheese
olive oil or avocado oil
salt, pepper, garlic, onion powder, red pepper flakes
2-3 tbsps diced parsley
Directions:
Preheat oven to 400 degrees.
Remove stems from mushroom caps and use a spoon to hallow them out a bit. Dice mushroom stems, green onion, yellow onion and chop bacon. Fry bacon or pancetta and set aside. Remove 1/2 of the excess grease and add in the veggies. Once the veggies are cooked, add to the cream cheese and pancetta. Mix everything until well incorporated. Spoon mixture into mushroom caps and top with parmesan cheese. Bake 12-15 minutes. Baste with melted butter half way through if desired.
