Cashew Garlic & Sage Stuffed Mushroom Caps
Stuffed Mushrooms
•12 -15 large champignon mushrooms
•1 medium yellow onion
•2-3 garlic cloves
•3-4 leaves of sage
•3/4 cup of cashews
•1 tbsp of nutritional yeast
•1 tsp of smoked paprika
•1/4 tsp of black pepper
•salt to taste
•a small amount of water to control the thickness
Soak your cashews over night or (boil them for a minute and leave them soaking in hot water for about half an hour )
Remove stems from your mushrooms and sauté diced onions, garlic,sage and mushroom stems in olive oil until golden brown.place the mixture to a blender ,add soaked cashews,nutritional yeast and the rest of seasoning.Add a little bit of water to help blending process(about 50 ml)The final consistency of filling should remind you of soft ricotta cheese .Fill mushroom caps (to ease the filling go inside tap them on a hard surface few times) .Bake them until golden brown for about 40 minutes at 180•C .Serve them with some pesto and micro greens garnish and a sprinkle of hot pepper chili flakes (this final steps are optional).Enjoy!!!

How to Make Stuffed Portobello Mushrooms
In this video, I will show you how to make the great side dish, stuffed portobello mushrooms.
Ingredients:
1 tsp olive oil
1 tomato
2 red bell peppers
1 garlic clove
4 oz mozzarella cheese
1 cup panko breadcrumbs
2 tbsp chopped chives
1/4 tsp salt
1/4 tsp pepper 4-6 portobello mushroom (depending on the size)

Easy Stuffed Mushrooms
Heyyy ya'll! I'm back with another 20 minute cooking tutorial. This time with a lil something different. I love carbs and dairy...but I try to be conscious of my intake from time to time. These stuffed Portobello Mushrooms are so good-and they're carb/guilt free =) Make them vegan without the addition of cheese or keep it-if you'd like. Hope you enjoy.

Stuffed Mushrooms

Deselect All
1/2 cup Italian-style dried bread crumbs
1/2 cup grated Pecorino Romano
2 garlic cloves, peeled and minced
2 tablespoons chopped fresh Italian parsley leaves
1 tablespoon chopped fresh mint leaves
Salt and freshly ground black pepper
1/3 cup extra-virgin olive oil
28 large (2 1/2-inch-diameter) white mushrooms, stemmed
Directions
Preheat the oven to 400 degrees F.
Stir the bread crumbs, Pecorino Romano, garlic, parsley, mint, salt and pepper, to taste, and 2 tablespoons olive oil in a medium bowl to blend.
Drizzle a heavy large baking sheet with about 1 tablespoon olive oil, to coat. Spoon the filling into the mushroom cavities and arrange on the baking sheet, cavity side up. Drizzle remaining oil over the filling in each mushroom. Bake until the mushrooms are tender and the filling is heated through and golden on top, about 25 minutes. Serve.
