Strawberry Fruit Leather written recipe:
Ingredients
3 Cups Strawberries
1 Tbsp honey
Preparation
1. Set the dehydrator to 135F.
2. Remove the stems from the strawberries and rinse.
3. Place the strawberries and honey in a blender and puree until smooth.
4. Pour the mixture onto the dehydrator sheet, and spread with the back of a spoon or spatula making sure that the mixture is completely even.
5. Dehydrate 3-4 hours, until the fruit leather is dry to the touch.
6. Cut with a knife or pizza cutter into strips or use scissors, keeping the paper on, and then roll the leather into “roll ups”.

Little Roger is absolutely obsessed with fruit. He would eat only fruit for every meal if he could, his absolute favorites right now are grapes and strawberries.
While I originally shared this recipe in 2015 as a great way to use up excess strawberries (especially if you harvest more than you need while strawberry picking), that is no longer a problem in our home because our little one tries to consume every strawberry in sight.
In years past, when making fruit leathers, I typically used plastic wrap as the base (the oven doesn’t get hot enough to melt the plastic) but I finally upgraded to these silicone baking mats and feel much better about baking fruit leathers on them for our family.
And I absolutely love knowing exactly what is in these fruit rolls – strawberries and honey!

Everyone no doubt has fond childhood memories of pulling their fruit roll-up off the plastic and rolling it back up before they pop it in their mouths! And if you are a parent currently maybe you secretly still enjoy doing it. Well now you can take it a step further and make your own. AND you can improve upon the store-bought recipe by making it WAY healthier. All you need is a blender, fruit, honey (optional), and some parchment paper. Be prepared that it does have to bake for a few hours, but your house will smell wonderful as it does. My son really enjoyed making and eating these with us as you can see here, but we parents enjoyed eating them just as much as he did. These are perfect for fruit that may be getting a little mushy and once made, make a great on-the-go snack. So take that trip down memory lane, grab your kids, and treat yourselves to a deliciously healthy and nostalgic treat.
Ingredients:
2 cups strawberries
2 tablespoons honey
Blend for 1 minute until liquid
Boil in a saucepan for 10 to 15 minutes on low-medium heat
Spread out evenly on parchment paper to about 1/8 inch thickness
Bake on 200 degrees Fahrenheit for 4 hours
Remove from oven and cool off for 10 minutes
Cut the edges to form a rectangle
Then cut strips out and roll them up.

This video was intended for last year’s Strawberry Moon Celebration (2017), where we had visited Alstede Farm in Chester, NJ to pick some strawberries. As most of you know, a majority of the recipes and footage I had taken last summer, had to be placed on the back burner as I planned my extremely detailed wedding day. However, fret not! None of that footage has been discarded or disregarded as scrap. I have instead decided to edit and upload the videos anyway, during their appropriate season, as bonus content. So I hope you enjoy these nonetheless, even if they’re a bit late ;-)
Now without further adieu, here is a Strawberry Fruit Leather recipe I tried with the strawberries we had picked last strawberry moon. The recipe is pretty straight forward, it only uses 3 ingredients!
I would like to thank for the recipe, it is one of the recipes I have pinned to my LITHA pinterest boards.
Ingredients:
1 cup of Strawberries (hulled, cut stem tops off)
1 tbsp freshly squeezed lemon juice
3 tbsp sugar
You’ll also need a blender, a baking sheet and some parchment paper.
Now you’ll notice in the video that I had first attempted this recipe with all of the strawberries that I had, which was definitely more than one cup. After noticing that my mixture would not condense down, I realized that I did have to follow this recipe per 1 cup of strawberries. So I ended up making each sheet in one cup increments, to achieve the best results.
I hope you are able to try this recipe for this strawberry moon, as I will be making it again this year to celebrate. I hope to keep this esbat tradition going throughout the years :-)
