How To make Strawberry Cheesecake 1
2 tb Margarine;
1/2 c Graham cracker crumbs;
8 oz Low-fat cottage cheese;
1/3 c Evaporated skim milk *;
1 1/2 tb Unflavored gelatin;
-(1 1/2 pk) 2 tb Sugar, divided
1/2 c Orange juice;
1/2 ts Orange; rind grated
2 Egg; whites
1/8 ts Salt
2 tb Water
1 c Strawberries; crushed
(ER note) Crush fresh strawberries, or thaw frozen unsweetened. For 1/3 cup evaporated milk, you can place a scant 2 tb. powdered skim
milk in a measuring cup and fill with liquid milk up to 1/3 mark. Preheat oven to 400 F. Melt margarine in 9 inch pan. Add crumbs, mix. Press mixture over bottom of pan. Bake 5 to 7 minutes. Cool. Sieve cottage cheese or puree in blender. Add milk and stir until smooth. Chill. In saucepan, mix 1 1/2 tb gelatin and 1 tb sugar. Add juice and rind. Heat over low heat, stirring constantly until gelatin is dissolved. Remove from heat. Let stand at room temperature. In medium bowl beat egg whites with salt until stiff. Fold in gelatin and cottage cheese. Pour over crumbs. Refrigerate until set before adding glaze. GLAZE Mix remaining gelatin (1/2 Tb) with water and 1 tb sugar. Heat until gelatin is dissolved. Stir in strawberries. Pour mixture over cheesecake and spread with spatula. Refrigerate until firm. 1/8 recipe, 120 calories, 1/2 starch, 1 lean meat, 1/2 fruit exchange

100g digestive cookies
40g melted butter
120g chopped strawberries
50g sugar
1tsp lemon juice
1 gelatine sheet
200g cream cheese
70g sugar
100g yogurt
120ml heavy cream
2 gelatine sheets
sliced strawberries

Strawberry Cheesecake Parfait Recipe:
Servings: 8
1 cup graham cracker crumbs
3 tbsp melted butter
16 oz cream cheese, at room temperatures
1 cup sweetened condensed milk
2 cups chopped strawberries
2 tsp granulated sugar
1/2 lemon, juice
In a large bowl, mix together the graham cracker crumbs and butter. Set it aside.
In another large bowl, using an electric mixer, beat the cream cheese until it is smooth. Add the sweetened condensed milk and mix well. Set it aside.
In another bowl, add the strawberries, sugar, and lemon juice. Mix until the strawberries are well coated.
Assemble the parfaits in eight individual glasses. Starting with the cream cheese mixture, spoon a layer into the bottom of each glass. Top the cream cheese with a layer of the graham cracker mixture and some of the fresh strawberries. Repeat the layers, finishing with the fresh strawberries.
Serve immediately or store in the refrigerator for up to 1 hour before serving.

CRUST:
350g Chocolate cookies - more if wanted
4 tablespoons unsalted butter
STRAWBERRY TOPPING:
1 pound/450g fresh or frozen strawberries
1/4 cup sugar
1 TBS Vanilla Extract
1 TBS gelatin
CHEESECAKE:
1 pound/450g cream cheese
1/2 cup powdered/confectioners sugar
1 teaspoon vanilla extract
1/2 cup whipping/heavy/double cream
Fresh strawberries for topping
Chocolate Strawberry Cheesecake. No Bake. No Egg
Chocolate strawberry cheesecake recipe (16cm round pan/6in)
1 cup = 240ml
100g chocolate chip cookies (3.5 oz)
35g unsalted melted butter (2.5 tbsp)
200g strawberries (7 oz)
35g sugar (3 tbsp)
a pinch of salt
2 tsp lemon juice (10ml)
200g cream cheese (7 oz)
30g sugar (2.5 tbsp)
1 tsp vanilla extract
100g sugar free Greek yogurt (3.5 oz or 5.5 tbsp)
250ml heavy cream (1 cup + 1 tbsp)
20g sugar (2 tbsp)
6g gelatine leaves, bloomed in cold water for 15 minutes (or 2 tsp powdered gelatine)
2 tbsp water to melt gelatine
Chocolate ganache: 35g dark chocolate (3.5 tbsp chococlate chip); 35g heavy cream (2.5 tbsp)

RECIPE:
Ingredients:
For the base:
400g (14.1oz) biscuits/ graham cracker
2/3 cup (150g) butter, melted
For the filling:
300grams (10.5oz) strawberries
600g (21.1oz) cream cheese (room temperature)
2 cups + 1tbsp (500ml) heavy cream
1.25 cups (150g) powdered sugar
1 teaspoon vanilla extract
18 grams gelatin powder
90ml cold water
For the topping:
300g (10.5oz) strawberries
3 tablespoons (37g) sugar
10 grams gelatin powder + 50ml cold water
100ml water
Directions:
1. To make the crust: In a food processor, process biscuits until fine. add melted butter and process again until combined. Press onto bottom of 24cm/9-inch springform pan. Refrigerate while preparing filling.
2. To make the filling: Whisk together the gelatin and the cold water in a small bowl, set it aside to let the gelatin absorb the water.
3. In a bowl of stand mixer place the cream cheese, powdered sugar and vanilla extract. beat until smooth. Gradually add heavy cream and beat until incorporated.
*Note: In the video I'm using flat beater to beat the cheese mixture. it's better to use a balloon whisk for better results.
4. Melt the gelatin in the microwave for 15 seconds. Pour the gelatin to the cheese mixture. Beat until incorporated and starts to thicken.
5. Cut the strawberries in half and arrange them around the edges of the pan. Try to use similar size strawberries. Pour the filling into the pan. Place in the freezer while making the topping.
6. To make the topping: in a small bowl whisk gelatin and cold water. Set aside for 5-10 minutes. In small saucepan place strawberries, sugar and water. Cook over medium-high heat until the sugar is dissolves and simmer for 5 minutes. Puree the strawberries with a hand blender until very smooth (to get darker red color add few drops of red food coloring). Let cool 5 minutes and add the gelatin. Stir until the gelatin is melted and incorporated. Let cool to room temperature and pour over the cake.
7. Refrigerate the cake overnight.
