How To make Strawberry Balm Syrup
2 pt Strawberries
3 c Sugar; approximately
10 Lemon balm sprigs, fresh
VARIATION:
LEMON THYME SYRUP:
2 pt Raspberries; 4 half pints
3 c Sugar; approximately
10 Thyme sprigs, fresh
"Delicious with ice cream, waffles, or in a drink. Try making it with lemon verbena or lemon thyme, too." To make a drink: put several tbsps in bottom of glass, add cold or sparkling water and ice. Wash and hull the strawberries, place in a bowl, and crush with the back of a wooden spoon or a potato masher. Line a medium bowl with cheesecloth, pour the crushed strawberries and their juice into the cloth, then gather up the corners and squeeze until all the juice has been extracted. Weigh the juice, then combine it with an equal amount of sugar and the lemon balm in a non-aluminium saucepan. Bring to a boil and boil it for 5 minutes. Remove from the heat, skim any foam from the top, and let cool. Discard the lemon balm before bottling. Store in the refrigerator. Original Cocktail: Strawberry Fields Old Fashioned
The Strawberry Fields Old Fashioned is an Original drink I created for a summer menu back in 2013. At the time I was just getting really deep into Gin and wanted to create a drink that paid Homage to one of my very favorite cocktails (The Old Fashioned) and also to the summer. Nothing says summer to me like fresh sweet strawberries. That year I also discovered Lemon Balm, an herb in the Mint family commonly used for tea. This year Strawberries are going off! They're so plentiful even Whole Foods is running crazy specials on them, so I thought why not give you guys something to do with em!
This drink is gonna take a little more elbow grease from you guys, sourcing ingredients is going to be a bit tougher, but for those of you really into it, it won't be that hard and for those of you who are not, use this video as inspiration to create on your own! The most pain in butt ingredient in this syrup is the Lemon Balm. It is an herb you can buy at any plant dealer/garden store (very common here in California, not sure how available it is elsewhere) But you need to buy it as a plant. Or grow some yourself. This grows like a weed so it's easy to cultivate. I have not been able to find this in a store already harvest fresh. Also I used in immersion circulator for the syrup, but it doesn't need to be made that way. The recipe below is to make the syrup without one but if you want the Sous Vide recipe (in detail; I know I did an overview in the video) hit me up...DM me on instagram or something and I'll get it for you. I haven't decided but I may make a video on this syrup soon. Alrighty I think that's it! Hope you guys enjoy!

Here's The Specs:
2oz (60ml) Plymouth Gin
.5oz (15ml) Strawberry Lemon Balm Syrup
4 dashes Angostura Bitters
Lemon Twist
For the Syrup:
16oz (453.5g/1lbs) Organic Strawberries
1 Large Bunch Lemon Balm Leaves and Stems
Zest of one Large Lemon
2 Cups (473ml) Demerara Sugar
1 Cup (236.5ml) Water
Combine Sugar and water over low heat on the stovetop. Once sugar is fully mixed and syrup is made add to a large non-reactive container. Then add Lemon Zest, Strawberries and Lemon Balm. Let stand at room temp at least 24 hours then refrigerate for another 24 hours. When done, strain mixture through a nut bag (or super bag) then double strain through a fine strainer (to make sure all seeds are out) put in a sterilized bottle, syrup lasts about two weeks in the fridge.
