These are easy to make, very hearty, and perfect for sharing. This is a dish you’ll commonly find served during the Lunar New Year, celebrations, birthdays, and even at dim sum restaurants. ????

Steamed Meatballs with Glutinous Rice is a popular snack in China. It is made by steaming pork, mushrooms and glutinous rice. The delicious pork balls are wrapped with soft and delicious glutinous rice on the outside, making them a memorable treat.

Ingredients
Minced pork 200g
Glutinous rice 100g
Dried shiitake mushrooms 4-5 pieces
Half a carrot
Onion Half
Green onion 1 stick
Ginger 1 slice
Garlic 2 slices
Cooking wine 1 tbsp
Soy sauce 1 tbsp
Oyster sauce 1 tbsp
White pepper 2g
Salt 3g
Recipe:
1 Place 100g of glutinous rice in a container, wash it well and soak it in water for about 2 hours.
2 Place 4 dried shiitake mushrooms and soak them in hot water for about 20 minutes.
3 Dice the onion, dice the carrot, dice the green onion, dice the ginger and dice the garlic
4 Dice the soaked mushrooms.
5 Mix the chopped onions, carrots, green onions and other ingredients with the ground pork
6 Add 1 tbsp of cooking wine, 1 tbsp of soy sauce, 1 tbsp of oyster sauce, 2 g of white pepper and 3 g of salt and mix well.
7 Form the minced pork into a ball with your hands and put it into the glutinous rice, rolling the meat ball to coat it with the glutinous rice.
8 Place the finished glutinous rice balls into a steamer.
9 Put enough water in a pot, turn on the gas to high heat and steam the glutinous rice meatballs for 25-30 minutes, ready to serve.

1 bag of 16 oz Tapioca Pearls
2 cups of Warm Water
For Filling
1 cup of Raw Mung Bean
Soak in water for 2-3 hours
Steam for 20 minutes
1/2 tsp of Salt
1/3 cup of Green Onion
3 tbsp of Oil
1/2 cup of Water
For Ginger Sugar Syrup
4 cups of Water
1 piece of 4 inch Ginger
1 3/4 cup of Sugar
1/2 tsp of Salt
For Coconut Cream
2 cups of Coconut Milk
1/2 tsp of Salt
2 tsp of Corn Starch

Pork Stuffed Tapioca Pearls: Saku Sai Moo (สาคูไส้หมู)
Hello Foodies!
SAKU SAI MOO! Pork stuffed tapioca pearls. Another delicious treat and dish to make. It's sweet, savory, and oh so very good. Saku sai moo (Thai) or also know as Sakoo yat sai in Laos is a sweet pork, radish, & peanut filling covered with tapioca pearls. You can typically find this appetizer being made during special occasions or sometimes if you're lucky, it can be found at your local Thai/Lao grocery store/restaurant. In Thailand, you can find street vendors selling these with an array of different colors. It's so beautiful to see and very addicting to eat. It can be eaten by itself or as a lettuce wrap with fresh cilantro and peppers. This dish is pretty easy but can be very time consuming. But it's so worth it. Today, I'll show you the pork filling version and I'm also going to be coloring some of the tapioca pearls with the butterfly pea flower and red dragon fruit powder for a fun experiment. It's going to be fun! So let's get cooking. :)

1/2 cup crushed roasted peanuts (2.5oz)
2 tablespoons cilantro stems (chopped)
6-8 cloves garlic
½ cup shallots (~2 shallots)
4 oz ounces Asian sweet radish (2/3 cup) [rinse and chopped]
1 teaspoon black pepper
1 teaspoon white pepper
1 tablespoon fish sauce
½ tsp salt
8 ounces palm sugar (crushed)
1 tbsp oil
---TAPIOCA PEARLS---
1 bag tapioca balls (14oz or 16oz bag works)
3 cups room temp water
---GARLIC OIL---
¼ cup minced garlic
½ cup vegetable oil
---TOPPINGS/GARNISH---
Garlic oil (as needed)
Crispy Garlic (topping)
Chili peppers (fresh or dried)
Lettuce leaf for wrapping
Cilantro
---COLORING---
Butterfly pea flower powder
Pitaya powder
*Coloring: Add as much coloring as you want. I did around 1 tsp (& adjusted) to 1 cup water to 1/2 cup pearls
(I know some of you will ask: I bought both the powders on Amazon. Just type and find)
*TAPIOCA STARCH/FLOUR: I have not tried this with tapioca starch. However, you can make it with just tapioca starch and water if you can't find the pearls. I just don't know the ratio since I've never done it before. You'll have to look up recipes for those using tapioca starch.
