My today's recipe is about Chinese Pearl Meatballs with Sticky Rice.

Ingredients:
1 Cup Rice Flour
1/2 Teaspoon Salt
1/2 Cup Hot Water
Oil for Greasing
Soaked Rice (For Coating)
Some Red Chili Flakes (For Sprinkle)
Freshly Chopped Coriander Leaves
For Stuffing:
2 Tablespoons Cooking Oil
1 Teaspoon Garlic Paste
200 grams Beef Mince
1 Teaspoon Red Chili Flakes
1 Teaspoon Garam Masala Powder
1 Teaspoon salt
1/2 Teaspoon dry coriander powder
1/4 Teaspoon Turmeric powder
1/2 Teaspoon Mango powder
2 Cups of water
1/2 Cup Peas
2 Tablespoons Chopped Carrot
2 Tablespoons Chopped Capsicum
2 Grated Boiled Potatoes
1 Fine Chopped Green Chilli
2 Tablespoons Chopped Coriander leaves

Saku Sai Moo I Steamed Tapioca Balls with Peanut and Pork Filling
Ingredients
1. Minced Pork 250 g.
2. Roast Peanut 200 g.
3. Sweet Pickled Radish 200 g.
4. Minced Shallot 1/2 cup.
5. Plam Sugar 2-3 Tbsp.
6. Soy Sauce 1 Tbsp.
7. Salt 1/2 Tsp.
8. Pound Coriander Roots,Garlic,Peppercorns 2 Tbsp.
9. Oil 1-2 Tbsp.
10. Tapioca 200 g.
11. Water
For Serving
1. Thai Fried Garlic
2. Bird's Eye Chilli
3. Green leaf, Coriander
How to cooking filling
1. Place a pan over low heat, pour oil into the pan. When it become hot put the coriander root paste until fragrance.
2. Stir fry until good smell and add the shallot into the pan and seasoning it with palm suger, salt and soy sauce.
3. Add the minced pork, sweet pickled radish,smashed roasted peanut into the pan, stir fry it.
4. Remove from heat and let it cool slighty, When it cook make a small balls.
How to cooking Tapioca
1. Clean the tapioca with some water, time while into the water 10-15 mintues.
2. Remove some water and put it in the colander.
3. Steam for 5 mintues and cover lightly with thai fried gralic oil.
Serve with green leaf, coriander, bird's eye chilli and thai fried garlic oil.

Ingredients
Minced pork 200g
Glutinous rice 100g
Dried shiitake mushrooms 4-5 pieces
Half a carrot
Onion Half
Green onion 1 stick
Ginger 1 slice
Garlic 2 slices
Cooking wine 1 tbsp
Soy sauce 1 tbsp
Oyster sauce 1 tbsp
White pepper 2g
Salt 3g
Recipe:
1 Place 100g of glutinous rice in a container, wash it well and soak it in water for about 2 hours.
2 Place 4 dried shiitake mushrooms and soak them in hot water for about 20 minutes.
3 Dice the onion, dice the carrot, dice the green onion, dice the ginger and dice the garlic
4 Dice the soaked mushrooms.
5 Mix the chopped onions, carrots, green onions and other ingredients with the ground pork
6 Add 1 tbsp of cooking wine, 1 tbsp of soy sauce, 1 tbsp of oyster sauce, 2 g of white pepper and 3 g of salt and mix well.
7 Form the minced pork into a ball with your hands and put it into the glutinous rice, rolling the meat ball to coat it with the glutinous rice.
8 Place the finished glutinous rice balls into a steamer.
9 Put enough water in a pot, turn on the gas to high heat and steam the glutinous rice meatballs for 25-30 minutes, ready to serve.

2/3 cup glutinous rice
1/4 cup dried shrimp
220 grams (1/2 pound) ground pork (20% to 30% fat content)
2 tablespoons cornstarch
1 tablespoon light soy sauce (or tamari for gluten-free)
1 tablespoon sake (or Shaoxing wine, or dry sherry)
2 teaspoons sesame oil (or peanut oil, or vegetable oil)
1/2 thumb ginger
4 green onions, coarsely chopped
2 egg whites
1/2 teaspoon sugar
3/4 teaspoon salt
1/4 teaspoon white pepper powder
1/4 teaspoon nutmeg powder
(Optional) 1/3 cup water chestnuts
