How To make Sri Lanka Beef Smore Stew

675 g Beef
25 g Onion
3 Garlic cloves
25 g Ginger
2 Tomatoes
4 Clove
4 Cardamom
250 ml Coconut milk, thin
2 cg Cinnamon stick
25 g Curry powder
1/2 ts Fenugreek
1/2 Lemon grass stem
Curry leaf sprigs 1/2 ts Fennel
25 g Coriander
1 ts Chile powder
2 ts Paprika
25 ml Vinegar
250 ml Coconut milk, thick
125 ml Oil
===========================> Directions <======================== Wash the meat and prick it all over with a skewer or fork. Chop the onion, garlic, ginger and tomatoes. Crush the cloves and cardamoms. Place the meat in a pan and pour the thin coconut milk over the top of it. Add the onion, garlic, ginger, tomato, cloves, cardamom, cinnamon stick, curry powder, fenugreek, lemon grass, fennel powder, coriander powder, chile powder, paprika powder and vinegar. Mix spices into meat and milk and bring to the boil. Simmer gently until the meat is tender, approximately 1 hour. Pour in the Coconut milk, thick and cook for a further 1 5 minutes. Pour the gravy into a bowl. Add the oil to the pan and fry the meat until browned. Pour the gravy back into the pan, bring back to the boil, then discard the cinnamon stick. Remove the meat to a carving board, cut into slices and serve with the gravy. ISBN #962 224 010 0

How to make Semore | Eurasian Food
Today we are learning how to make one of my favourite #Eurasian recipes: Semore! Let me know how you get on with making this. If you have any suggestions to make it better, let me know! :D
Ingredients
250-300 g Chicken, Pork or Beef (can substitute with hard tofu for a vegan option)
1 Large Onion or a handful of Shallots
3-4 Garlic Cloves
2 ½ inch Thumb-sized Ginger, skin scraped off
1 Small Onion, quartered
1 Bay Leaf (optional)
1 small stick of Cinnamon
5-6 Pieces of cloves
2-3 Tbsp Vinegar
1 Tbsp Dark Soy Sauce
4 Tbsp Light Soy Sauce
1 Tbsp Worcestershire Sauce
1 Tbsp Black pepper
6 Tbsp Oil
1 Large Potato or Sweet Potato, quartered
1 small carrot, cut into 1-inch pieces
1 Cup Water
Method
1. Wash and cut the meat or tofu into 1 ½ inch cubes and set aside.
2. Grind the large onion, garlic and ginger finely in a food processor.
3. Mix the ground ingredients from (2), with the meat or tofu in a large bowl.
4. Add black pepper, dark and light soy sauce, and Worcestershire sauce to (3). Leave to marinate for 15 minutes.
5. In a small wok or casserole, add the oil. Let it heat up, then add the small quartered onion, cinnamon stick, and cloves. Fry over low heat for 5 minutes.
6. Add the marinated meat or tofu and cook until the meat is no longer pink.
7. Add the water and simmer for 45 minutes, lid covered. Add more water if needed during simmering.
8. Add potatoes and bay leaf, cook for 5-6 minutes.
9. Add carrots and cook for ten minutes or until just tender.
10. The water should just cover the meat and vegetables. Add vinegar and adjust to taste (more soy sauce or vinegar).
11. To serve, have it with rice, mashed potato or pasta.
12. Enjoy!

1 tbsp Light soy sauce
1 tbsp Dark soy sauce
1 tbsp Kicap manis
1 tbsp Vinegar
1 tbsp Black pepper
2 tbsp Olive oil
1 Cinnamon

4 cloves garlic (smashed)
1 Onion
2 Celery
2 Leeks
