Ingredients:
2 Acorn Squash, medium size
3 tbsp Olive Oil
¾ tsp Black Pepper Powder
1 tsp Garlic Powder
½ tsp Basil Leaves, dried
½ tsp Thyme Leaves, dried
4 tbsp Parmesan Cheese, can add up to 8 tbsp for more cheesy crust
Salt, to taste
Recipe Notes:
1. Squash Selection: Opt for dark green Acorn Squash or those with yellow spots. Yellow spots mean a sweeter taste, letting you choose based on your preference for sweetness.
2. Don't discard the Acorn Squash Seeds: Roast them as you would pumpkin seeds for a crunchy, nutritious snack. Just clean, season, and roast for a delightful treat.
3. Seasoning: Enhance the flavor by seasoning with your favorite spices and dried herbs. Black pepper is a great base, but feel free to add chili flakes or powder for extra heat.
4. Cheese Topping: Parmesan cheese adds a delightful crusty layer, but it's optional. The squash tastes great even without it.
5. Roasting Tips: Stick to the recommended roasting time and temperature for crispy, golden results. Experimenting with higher temperatures and adjusting the baking time can offer a different texture and flavor.

Easy baked spaghetti squash recipe with butter cooked chicken, parmesan, and fresh lemon. Healthy and delicious!
Spaghetti squash alone can be a bit dull, but it’s amazing what butter seared chicken, parmesan cheese, fresh parsley, and plenty of lemon can do. What used to be boring turns into to something that’s almost impossible to stop eating. We use chicken thighs, but there’s no reason you couldn’t swap them for chicken breast.
Don't forget to watch our video for how we like to cut and cook spaghetti squash. We even show how you can microwave the squash to speed things up if you need to. Here's the link:
