Lamb broth vegetable soup | Vegetables soup with lamb stock
This is a simple, hearty, comforting, easy, healthy and delicious vegetable soup recipe. It has a superb lamb flavour coming through and we went for plenty different vegetables, but of course you can use any vegetable combinations you like.
INGREDIENTS for Vegetables soup with lamb stock
Lamb broth vegetable soup
BROTH:
• Lamb bones: we used lamb leg bone;
• 2 cloves garlic;
• 2 red onions;
• 2 tsp peppercorn;
• 2 tsp coriander seeds;
• 2 bay leaves;
• 2 tsp salt
• 1.5 l of water (it also depends on your one pot/pressure cooker size)
SOUP ingredients (no quantities and everything is a little, depending on your taste):
• Cabbage;
• New potatoes;
• Carrots;
• Broccoli;
• Fresh Coriander;
• Yellow, green, yellow peppers;
• Spring onions;
• Green beans;
• Sweetcorn;
• Peas;
• Onion;
• Ginger;
• Garlic;
• 50 g butter;
• 1 tsp salt
• 1tsp turmeric
PROCESS:
1. Prepare lamb broth in pressure cooker / one pot;
2. Add all broth ingredients, set time for 35 minutes;
3. Follow instructions of your one pot/pressure cooker;
4. When broth is ready, add in pan butter, ginger, garlic, onion, fry for 2-3 minutes;
5. Add salt, turmeric, mix
6. Add cabbage and all veg (except broccoli) and cook for 10 mins covered on medium heat;
7. After 10 mins add broccoli and boil for another 5 minutes;
8. And your soup is ready!

Lamb Bone Soup
Ingredients
A lamb bone ( I used the bone from a full leg of lamb)
1000ml of water
4 garlic cloves
4- 6 pimento seeds
1 maggi cube
1 tsp of coarse black pepper
2 medium carrots (chopped)
225g pumpkin ( deseeded, peeled and chopped)
2 white potato’s ( cut up)
Large handful of thyme
1/2 medium brown onion (chopped)
3 spring onions ( chopped)
1 whole scotch bonnet or 1/4 diced scotch bonnet ( depends on how spicy you like your soup)
Coup soup mixture ( 1 pack)
Dumplings/ spinners
200 ml can of coconut milk
Method
Add water to a pot and allow to boil. Once boiled add lamb bone , followed by garlic, pimento seeds, thyme, spring onions, onions, scotch Bonnet, black pepper, maggi cube , pumpkin, potato and carrots.
Allow to cook for 10 minutes on medium high heat, then add cock soup mixture as well as coconut milk. Make sure all is combine then add dumplings spinners and cook on medium heat for 15-20 mins)
Scrap of ALL / ANY remaining meat on the lamb bone as it will help to add flavour and depth to your soup.
Add salt and pepper to taste ( up to preference)
Leave to simmer on low heat for 5 mins .
Serve and enjoy

OMG! Italian Style Rich lamb stew with honey and caramelised onion
The best stew you will ever taste. This slow braising method fuses the ingredients together leaving you with an incredible tender, moist and rich flavoured meat.
Lamb is becoming a more fashionable red meat as it’s a healthier meat as it contains many vitamins, minerals and B12. Try and buy grass fed and it will also have the heart healthy omega 3 fatty acids.
But enough about health, this recipe is about taste. If you like those rich casserole stews, then look further, this is a complete meal cooked in one pot. The slow cooking process tenderises the meat and develops the flavour.
A complete meal because it has carrots, peas, potatoes all built in. The best part is that it will taste even better the next day, so make a big pot. It’s also easy to freeze for ready made meals when you’re short on time. I usually place them in glass storage containers and then microwave them or add a splash of water in a saucepan and reheat on very low heat.
For the wine, make sure you buy a full bodied wine, like a shiraz or cabernet sauvignon. Do not go crazy on the price but don’t skimp either, the quality of the wine will affect the sauce. It is a red wine sauce after all.
As an option, I like to serve it with a crusty toasted bread, rubbed with a clove of garlic for that extra flavour. This is of course optional. Sprinkle some freshy chopped parsley or you can even use the celery leaves to add colour and freshness before serving.
