How To make Spit Roasted Chili Barbeque Ribs
4 T Butter
1 ea Onion finely chopped
2 ea Cloves garlic, fine chopped
4 c Canned plum tomatoes
2 t Chili powder
1 c Dry red wine
1/2 c Soya sauce
2 T Cornstarch
1 T Granulated sugar
1 ea Salt
1/2 c Chicken stock
5 lb Trimmed spareribs
Melt butter in saucepan or skillet over medium high heat and cook onion until soft. Add garlic and cook a minute longer. Put tomatoes through a food mill or puree in a blender or food processor. Add to onion mixture along with all other ingredients except meat. Bring to a boil and simmer for several minutes. Remove from heat and set aside. Thread ribs on to spit and secure with prongs. Close cover two thirds of way. Spit roast for 30 minutes, then baste every ten or so for another 40 minutes or until juices run clear. Place several tablespoons of sauce on each plate and serve with ribs. Makes about 4 servings

Rock Salt to taste

How to Make Smoked Salt and Pepper Baby Back Pork Ribs
These pork ribs only need 3 ingredients and they are absolutely DELICIOUS! In this video i'm going to show you how to make smoked salt and pepper baby back pork ribs!

You can use this recipe and method on any cut of pork ribs, but in this video i'm using baby back pork ribs.
See below for some important points from the video:
- Salt & pepper, 50/50 mix by weight! If using normal table salt, halve the weight of the salt as it's much more intense than kosher salt
- I ran my pit at 275F/135c for this pork rib cook
- My method for pork ribs is smoke until you are happy with the colour, wrap until they are tender around 205F/96c internal and then finish with a sauce/glaze if you like
- If you want some sweeter pork ribs, add some honey and brown sugar to the foil wrap with the butter

Beef spit-roast, we tried this grilling method for the first time!
Spit-roasted beef with meat from beef ribs, without the bone, and cut into large pieces. Particularly aromatic, very tender and juicy, with a careful selection of spices and herbs. Cooked on the spit in a way that I believe you haven't tasted before or perhaps you have done it with a different process. We, the grill philosophy team, tried such roasting on a spit for the first time. The detail lies in the grilling process. The experiment was absolutely successful!
