How To make Spinach Cheese Puffs
1 10-oz package frozen chopped
1 c Milk
1/2 c Margarine or butter (1 stick
1 t Salt
1 c All-purpose flour
4 Large eggs
1/4 lb Gruyere or swiss cheese (shr
1/2 c Grated parmesan cheese
Parsley, beet or salad green Calories per serving: 50 Fat grams per serving: 4 Approx. Cook Time: Cholesterol per serving: 22 Drain spinach; squeeze dry with paper towels. In 3-quart saucepan over medium heat, heat milk, margarine or butter, and salt until margarine melts and mizture boils. Remove saucepan from heat. With wodden spoon, vigorously stir in flour all at once until mixture forms a ball and leaves side of saucepan. Add eggs to flour mixture, 1 at a time, beating well after each addition, until mixture is smooth and satiny. Stir in Gruyere and parmesan cheeses and spinach. If not baking right away, cover surface of mixture with plastic wrap and refrigerate. Preheat oven to 375 degrees. Lightly grease 2 large cookie sheets. Drop batter by level tablespoons onto cookie sheets, about 1 1/2 inches apart. Bake 15 to 20 minutes until cheese puffs are golden brown. Arrange appetizer and garnish on platter; serve immediately. MAKES 4 DOZEN CHEESE PUFFS.

Spinach Cheese Puffs Makes 9 to 12
Ingredients:
FOR THE PUFF PASTRY
All purpose flour – 2 cups + 1/3 cup
Chilled Butter (unsalted) – 250g
Salt – a large pinch
Chilled water – ½ cup (or slightly more)
Synthetic vinegar – a few drops
FOR THE FILLING
Blanched spinach leaves (roughly chopped) – 1 cup
Paneer/Cottage Cheese – 200g
Mozzarella and Processed cheese (grated) – ¾ cup
Onion (sliced) – 1 large
Capsicum (chopped finely) – 1 tblsp
Garlic (grated) – 1 tsp
Spices(nutmeg – a pinch, red chili flakes and pepper powder to taste)
Salt – to taste
Extra virgin olive oil – 1 ½ tblsp

Spinach & Artichoke Puffs
Filling
8 oz cream cheese
1 cup sour cream
8 oz fresh spinach
3/4 cup marinated artichoke hearts
1 garlic clove
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
1/2 tsp paprika
1/2 cup parmesan cheese
1 1/2 cups mozzarella
2 pack puff pastry
Egg wash
Mix all the ingredients for filling. Assemble as shown on video and bake at 400F about 15 min until golden

1/3 cup Green onions
6 oz ( 170g ) Baby Spinach
1 red onion, chopped
2 tbsp. olive oil to saute
Topping: 1 tbsp. Sesame Seeds, paprika
Egg Wash: 1 egg plus 1 tsp. olive oil
Preheat oven at 425 F (220C) and bake for 15 min
Reduce the temperature to 320F (160C) and bake for 15 min. more.

Three Cheese Spinach Puff | Sanjeev Kapoor Khazana
Puff pastry enclosed with a three cheese mixture and spices, baked and serve hot.
THREE CHEESE SPINACH PUFFS
Ingredients
½ cup grated cottage cheese
½ cup grated gruyere cheese
¼ cup grated processed cheese
½ medium bunch spinach leaves, shredded
250 grams puff pastry sheet
2 teaspoons butter
1 teaspoon olive oil
6-8 button mushrooms, chopped
3-4 shiitake mushrooms, chopped
½ cup crushed corn kernels
Salt to taste
Crushed black peppercorns to taste
Method
1. Preheat oven to 180° C. Line a baking tray with silicon mat.
2. Heat butter in a non-stick pan. Add olive oil and button mushrooms and sauté for 1 minute. Add shiitake mushrooms and sauté for 1 minute. Add corn kernels and sauté for 1 minute.
3. Add spinach, mix and cook for 1 minute. Add cottage cheese, gruyere cheese and processed cheese and mix. Add salt and mix. Add crushed peppercorns and mix well.
4. Dust the worktop with some flour, place the sheet and roll out into thin rectangle sheet. Cut the sheet into 2 inch rectangles.
5. Put some mushroom mixture in the center of each rectangle, brush some water on the edges, fold to make a rectangle and seal the edges. Press the edges with the back of the fork, coating with cornstarch to create a pattern.
6. Put the puffs onto the lined baking tray. Put the tray into the preheated oven and bake for 20 minutes.
7. Serve hot.
